24.01.2022 It's going to be a hot week! We have some great recipes to use with our sweet potatoes! Genna's Sweet Potato Salad The Purple Skinned White Flesh Sweet Potato roasted adds colour and sweetness to this dish and is the perfect choice for this curry flavoured, pineapple tang salad! It’s so nice!... 500gm Purple Skinned White Flesh Sweet Potato 1 Tblspn Olive oil to coat sweet potato for roasting 225gm tin of Pineapple pieces (drained) 1 cup of unsalted Cashews 4 Spring onions cup Mayonnaise 2 teaspoons Curry Powder cup desiccated Coconut Preheat oven at 180 degrees celsius. Wash the sweet potato and leaving the skin on cut into 2 cm size cubes. Coat sweet potato with olive oil and place on baking paper. Bake in oven for 20-25 minutes until slightly brown and cooked. Cool and when cold place in a bowl. Add drained Pineapple pieces, Cashews and chopped Spring Onions. In a separate bowl mix together the Mayonnaise, Curry powder and Coconut. Then mix this through the Sweet Potato Salad. Keep refrigerated until ready to serve. Ann's Sweet Potato Salad 500gm Orange Sweet Potato 1 Tablespoon Olive Oil (enough to coat) Handful Baby Spinach Leaves Chopped( or you can use our Sweet potato leaves that we sell!) 1 Tablespoon Sesame Seeds 1 Tablespoon Honey 1 Clove of finely chopped Garlic 2 Tablespoons Lemon juice Preheat oven at 180 degree celsius. Peel Sweet Potato and cut into 2 cm size cubes. Coat with Olive Oil and place on baking paper and roast in oven for 20-25 minutes until slightly brown and cooked. Cool and place in a bowl with the chopped Spinach leaves. In a separate bowl mix together the Honey, Garlic and Lemon juice. Pour this over the Sweet Potato and Spinach, then mix through the Sesame seeds. Refrigerate until ready to serve.
19.01.2022 Had some purple sweet potato to use up, so I decided to give bread rolls with purple filling a go (meant to use Ube but I didn't have any) and also made purple ...sweet potato chiffon cake again...all baked in my Breville Smart Oven with Air Fryer :) the texture of my baked goods come out much better in the air fryer than my normal oven. I love the colour and taste of purple sweet potato...afternoon tea and dessert sorted for today! See more

02.01.2022 Sweet Potato Spice Cake! I have been playing in the kitchen and finally have this recipe perfected! Ingredients: 3/4 cup raw sugar, 1 cup olive oil, 3 eggs, 2 teaspoons vanilla essence, 600 gm cooked and mashed sweet potato, 2 cups plain flour, 2 teaspoons bi-carb soda, 1 teaspoon ground cinnamon, 1/2 teaspoon nutmeg, pinch of salt, 250 gm packet cream cheese, 1 dessertspoon icing sugar, squeeze of lemon or lime juice. Method: Preheat oven to 160 degrees. Line two loaf cake ...pans with baking paper. In a bowl pour in the olive oil, raw sugar, eggs, vanilla essence and mashed sweet potato. Beat until well combined. Sift together the plain flour, bi-carb soda, cinnamon, nutmeg and salt. Fold into oil and egg mixture. Divide mixture for the two cake pans and cook in oven for 1 hour or until a skewer comes out clean. Cool on a wire rack. When cold beat together the cream cheese, icing sugar and squeeze of juice then ice both cakes. Store in the refridgerator. Can be frozen for later use. Hope you enjoy - it's now our favourite cake!!
