Ooey, gooey Barossa Cheese camembert cheese is enveloped in flaky butter puff pastry to create a beautiful French-inspired dish you can serve with a simple salad and fresh baguette.

Michael wears many hats on his property in the foothills near Tweedies Gully, Pewsey Vale and they all stem from a passion to create produce of the highest standard. Creating and making food with passion, care and a deft hand Michael understands the importance of raising his animals ethically, with the ability to free range and that great food comes from this love that is put into the process. Michael milks his small herd of jersey cows daily, with the milk producing rich beautiful butter, cream and a source of feed for his Berkshire, Tamworth and Hampshire Black and Red Pigs’, creating an intensely flavoured pork. Michael has recently added oyster mushrooms to the mix of what he produces yet another hat that he has to juggle oh, then there’s the amazing accommodation options where people can stay and get the full experience of a beautiful farm life! A ‘mostly’ portrait and ‘brief’ interview series exploring the idea that one image has the power to tell the whole story. Each ‘sitter’ suggests the next person to be photographed in this series, and thus ensues an interesting and unknown trail of Barossa identities to come. We save quinces from our garden in Winter and make them into syrup, that delicate floral character and... the slight bitterness from the citrus pair beautifully. Attending events with friends in my early 20's. And as a father, now sharing this wonderful community event with my children.
