23.01.2022 Ian has been spotted down the aisle collecting the goods for his world famous toasted muesli. To get the scoop on this tasty delight read on... 7C Rolled Oats 2C Sunflower Seeds 1C Sultanas 1C Psyllium Husk... 2C Raw Hazelnuts 3T Cinnamon 1C Olive Oil 1/2C Honey Approx. 3C Coconut Flakes Heat oven to 150C fan bake. Roughly crush Hazelnuts in a mortar and pestle or food processer. Leave whole if you have neither. Measure Oats, Sunflower Seeds, Sultanas, Psyllium, Hazelnuts and Cinnamon into a large bowl or pot. Combine. Measure olive oil and pour into a small saucepan. Measure honey using same cup measure (oil stops honey sticking to the cup) and add to saucepan. Bring to a light simmer over high heat then remove from stove. Add oil and honey to bowl of dry ingredients. Combine well then tip muesli into two large lasagna trays, or similar, measuring approx. 15cm x 30cm. Bake at 150C for approx. 35mins, or until desired toasting level is reached, removing the muesli every 7mins to stir well. Remove muesli from oven and add Coconut flakes to cover the entire surface. Return to oven for a further 5-7mins to your desired level of coconut toast. Leaving coconut to the end helps prevent it from overcooking as it is high in oil. Remove oven and leave on stovetop to cool with a tea towel over top. Once cooled store in an airtight container. Tips: Leave 2-3cm headspace in your baking tray(s) of choice so you can fit the coconut at the end and dont spill muesli while stirring. Swap hazelnuts for your favourite nut. Pecans or Walnuts are also excellent. Swap anything in the recipe out for similar ingredients e.g. rolled quinoa, barley, triticale, wheat germ, oat bran, sesame seeds etc. Finer ingredients like wheat germ and oat bran absorb more honey and oil resulting in more biscuity pieces but these high fibre ingredients can be too much for some! Serve with seasonal stewed fruit and a nice tart yoghurt. Prepare to be regular.

Olga drops in with her homemade pasta and then volunteers on a Thursday with Wendy from 12-3pm whizzing through checking off the Thursday box orders, deliveries and so much more! ... Our Chair of the Board, Kathleen Jones, has converted her living room into a propagating centre for these beautiful sturdy locally grown vegetable seedlings. They have been hardened off too, so they can be planted out directly and will withstand our cold Bathurst nights. We also have plenty of newly arrived rare & heirloom seeds ready to go in the ground outside or start in trays indoors, including beetroots, peas, pak choi, tomato and many more... Go on, you know you want to go outside and get your hands in the dirt.
