25.01.2022 With the warmer weather comes tomato season, but it also makes tomatoes ripen up a lot quicker So if you have a bunch of overripe tomatoes or if your garden is producing excess; try making this simple tomato salsa: Dice tomatoes and add to a bowl. Include the juice and all.... To the bowl, add in diced red onion, chopped coriander (optional, of course) and some lime juice. Season with salt and pepper and stir to combine. Delicious for an afternoon snack with tortilla chips, alongside other Mexican favourites like fajitas and tacos, or serve with grilled meats or seafood
25.01.2022 Tomato Strawberry Bruschetta You’ll want to save this vibrant, fresh and easy recipe for this festive season INGREDIENTS... 1 large Delbake french stick (baguette), sliced on the diagonal 1 cups (160g) of Flavorite Petite cherry truss tomatoes, quartered 1 cups (160g) of new season strawberries, stems removed and diced A generous handful of @butler_market_gardens fresh basil leaves, finely sliced 1 clove of new season local garlic, grated or finely diced 3 tablespoons of @grampiansoliveco olive oil + more for brushing 2 tbsp red wine vinegar Salt & pepper to taste Balsamic glaze for topping METHOD 1. In a medium bowl, toss together the tomatoes, strawberries, basil, garlic, olive oil, red wine vinegar, salt and pepper. 2. Let sit for 10 minutes to allow the flavours to combine. 3. Just before serving, toast the baguette slices until lightly golden and crunchy. 4. Brush each slice with olive oil, then top with the tomato strawberry mixture, a small sprinkle of sea salt, and a drizzle of balsamic glaze. 5. Serve right away! 20.01.2022 BEEF BOURGUIGNON Don, the director of AmaLocal loves French food! And this is a favourite recipe of his; Beef Bourguignon It’s a delicious beef, mushroom and vegetable dish that not only tastes amazing, is easy to make and packed full of delicious vegetables, it also makes a great pie filling! ... Serves 5 - 7 INGREDIENTS 2 tablespoons of olive oil 1 kg of beef chuck or gravy steak, trimmed, cut into 5 cm pieces (If you have any bones, add them too as they add lovely flavour). *Remove bones after cooking* 1 - 2 brown onions, finely chopped 200 g shortcut bacon, halved length-ways, cut into 1 cm strips 2 garlic cloves, finely chopped 1 to 2 cups of red wine cup of beef stock 1 tablespoon of tomato paste (alternately use 2 ripe diced tomatoes) 1 bunch of spring onions, sliced 250 g of small button mushrooms 500 g of carrots or a carrot bunch, chunky and trimmed Green beans, and/or snow peas, to serve Mashed potato and/or parsnips, to serve Salt and pepper, to taste Pie version - Puff pastry, enough for the base, sides and top if you are making a pie METHOD 1 Heat 2 tablespoons of oil in a large, heavy-based casserole dish over medium-high heat. Cook beef, in batches, for 5 to 6 minutes or until browned then transfer to a bowl. 2 Reduce heat to medium and add remaining oil to the pan. Add brown onions and bacon, cook and stir for around 6 minutes or until the onion has softened. 3 Add in the garlic and cook for 1 minute. 4 Return beef and juices to the pan. Add in wine and bring to the boil to remove alcohol. 5 Add stock and tomato and bring to the boil. 6 Reduce heat to very low and simmer, covered, for 45 min to 1 hour. 7 Add spring onions, carrots and mushrooms and cook, covered, for another 20 to 30 minutes or until meat and veg are tender. 8 Season with salt and pepper and serve with green beans/snow peas and mashed potatoes/parsnips! 19.01.2022 STIR FRIED CHINESE BROCCOLI Looking for a quick yet flavoursome side vegetable dish that you can whip up in next to 15 minutes? Try this stir fried chinese broccoli recipe! ... Serves ~4 INGREDIENTS 2 chinese broccoli from @butler_market_gardens 4 cloves of Australian garlic 1 tablespoon of sesame oil 3 tablespoons of olive oil 2 tablespoons of oyster sauce (for a vegetarian option use soy sauce or tamari if gluten free) METHOD 1. Cut chinese broccoli into 4cm wide pieces and separate the stalks from the leafy parts. The stalks will take slightly longer to cook so it’s best to separate them 2. Slice the garlic cloves thinly and place to one side 3. Heat a wok on medium heat and add in the sesame and olive oils 4. When the oil has heated up, add the chinese broccoli stalks to the wok and stir fry for 1 minute or so 5. Add in the garlic slices, leafy parts of the chinese broccoli and the oyster sauce and continue to stir fry until the broccoli leaves have wilted 6. Serve chinese broccoli on a plate and dig in

Give this easy and creative recipe a go You will need:... * Celery from @amalocalbayside * Apples from @amalocalbayside * Peanut butter * Mini choc chips * Dried cranberries * Pretzels 1. Cut a stick of celery into approximately 10cm long pieces 2. Fill the centers of the celery sticks with peanut butter. 3. Photographed is the incredible James Tut. James is a South-Sudanese refugee and has beat overwhelming odds to get an education. He now teaches in refugee camps in Ethiopia. Please read below to learn more about James: James has a Bachelor of Community Development and Leadership degree, and is one of the proudest moments of the 42-year-old’s life Only 3% of refugees are enrolled in any form of tertiary education, compared to 37% of their non-refugee counterparts globally. For those who have fled conflict in South Sudan, the proportion is much smaller For the past few years, he has been Vice-Principal of one of four primary schools in Ethiopia's Gambella’s Jewi refugee camp Ethiopia is the world’s youngest nation, yet 80% of the population is illiterate Education for refugees was already a major challenge prior to COVID-19, and a UNHCR report warns the dual impacts of the pandemic and attacks on schools, targeting teachers and pupils, could set education efforts back decades James is determined that his own children 3 boys and 2 girls, aged between 18 months and 14 years will enjoy the same level of education he has had, no matter the odds against them If you would like to make a donation to add to the $500, you will see an option to do so at the top of the AmaLocal ordering list
14.01.2022 TOMATOES GLORIOUS TOMATOES As one of the most versatile vegetables (well technically a fruit, botanically) tomatoes are currently in season! Here are some fun facts about these juicy bursts of goodness:... Their red colour is due to the powerful antioxidant called lycopene Lycopene can help reduce the risk of cancer and keep our heart healthy It’s best to store tomatoes at room temperature (in the pantry or on the bench). Storing them in the fridge decreases their flavour! Tomatoes are a good source of vitamin C, which helps to increase iron absorption, so try pair with iron rich foods for maximum absorption. 14.01.2022 KEEPING HERBS FRESH Want to prolong the freshness of your herbs? Follow our handy hints on how best to store your herbs. We have classified herbs into 3 different groups:... 1. Leafy herbs = Parsley / Coriander / Mint / Dill We recommend washing these herbs first in cold water to remove any dirt and debris as these can speed up the decaying process. Cut off the ends and thoroughly dry your washed herbs by spinning in a salad spinner and patting dry with a tea towel or paper towel to remove any moisture. Wrap the dry herbs in a slightly damp tea towel, chux or paper towel and store in an airtight container or bag in the fridge. 2. Woody herbs = Rosemary / Bay leaves / Kaffir Lime Leaves / Thyme / Sage These hardy herbs store really well in the freezer as they are often added to dishes at the start of the cooking process. Alternatively, store them in an airtight container or bag in the fridge. They are best washed just prior to being used in the kitchen. 3. Delicate herbs = Basil Basil is notoriously sensitive and is best used sooner rather than later where possible. Treat basil like a bouquet of flowers; trim the ends of the stems slightly, fill up a jar, glass or vase with a few cms of water, place basil in the vase and store at room temperature, away from direct sunlight. 05.01.2022 MISO GLAZED EGGPLANT A super quick midweek dinner idea; using AmaLocal produce and ingredients of course INGREDIENTS ... 500g of eggplants 4 tablespoons @umamipantry miso paste 2 tablespoons of @grampiansoliveco olive oil, and extra for pan frying eggplant 2 tablespoons of sesame oil 1 tablespoons of local honey 1 tablespoon of soy sauce or tamari 2 tablespoons of mirin (from your local Asian grocer) cup of @butler_market_gardens spring onions, thinly sliced Black and white sesame seeds to garnish METHOD 1. Preheat the oven to 190 fan-forced. 2. Cut the eggplants in half lengthways and use a knife to score a diamond pattern into the eggplants, as you would a mango. 3. In a bowl, mix together the miso paste, oils, honey, soy sauce and mirin. 4. Heat a drizzle of olive oil in a frying pan over medium heat. Once hot, add the eggplants and cook on each side for 3 to 4 minutes. 5. Use a pastry brush to brush the miso mixture over the eggplants generously on one side. 6. Place eggplants on a lined or lightly oiled baking tray and cook in the oven for 20 minutes, or until eggplants are cooked through. 7. Sprinkle eggplants with sesame seeds and spring onions - yum!! Enjoy

INGREDIENTS White rum (leave out if you prefer a non-alcoholic version) 6 - 10 mint leaves grown locally at @butler_market_gardens Soda Water 1 tablespoon of fresh lime juice 1 2 teaspoons of sugar (or any other sugar substitute desired) METHOD 1. Muddle/mix the mint sprigs with the sugar and lime juice. Alternatively you can combine and bruise in a mortar with pestle for a better flavour 2. Add rum and top up with soda water 3. This quick & simple hack will pack a herby punch in future meals in seconds!... 1. Chop herbs roughly and place into the wells of an ice cube tray 2. Fill the wells with oil of your choice (olive oil is a great source of monounsaturated fats which helps reduce cholesterol levels, in turn keeping your healthy!) 3. Place the ice cube tray in the freezer for at least 12 hours 4. Use these frozen herbs in any dish you desire from stews to soups, or pan and pasta sauces! How do you use your leftover herbs?
