22.01.2022 It is not too late to come in and ask how you can cook your Xmas ham. Check out the pictures attached. Hams cooked in a gas smoker with Australian black wattle wood chunks. Cooked low and slow for 7 hours. Lamb cured/brined for 6 days in spices and white wine vinegar. Both tasted amazing and had to be frozen quickly to stop me from eating them. ... We have the old stalwarts - hickory and mesquite but we have added apple, cherry, jam (acacia), olive, pear, plum and peach. These can all be used alone or blended to add that unique flavour that people will be asking how did you do it. 14.01.2022 Our Low n Slow Smoking Expo has come and gone and what a great success. A lot of food cooked and consumed and a lot of people attended who, hopefully, received information and incentive to start that low n slow smoking adventure. We would like to thank all who made it a successful day - Smoking Dog BBQ, who provided the professional touch to the day, Red Garnet Infused Oils provided great products and advice on oils and rubs with the use of Aussie native plant ingredients.
