11.01.2022 AMAZING BLUEBERRY, LEMON & OLIVE OIL MUFFINS! no eggs or butter ! 375g self-raising flour tsp baking powder 125g caster sugar 250ml milk 125ml extra-virgin olive oil 1/2 Cup Natural Greek Yoghurt finely grated zest & juice of 1 lemon 200g frozen or fresh blueberries (or any other berries!)... Preheat the oven fan 170C, and line the holes of a 12-cup muffin tin with squares of nonstick baking paper or muffin cases. Mix the flour, baking powder and caster sugar in a large bowl. Lightly whisk the milk, olive oil and yoghurt together in a jug. Pour the egg mixture into the bowl and gently mix until half combined. Add the lemon zest, juice & blueberries and fold in carefully to combine don’t overmix. Spoon the mixture into the muffin tins. Bake 25-30 minutes.
