24.01.2022 In the mood for a kale salad but also want some tabbouleh - why not have both? Kabbouleh salad is the best of both worlds and a flavour you will want to eat over and over again!! Next time you are at #BirkenheadPoint, pop on in to #BelfrescoDrummoyne to get the ingredients you need to make this memorable fresh salad. 1 bunch Kale, washed finely sliced ... 1 bunch Parsley, washed finely sliced 4 shallots, finely sliced 4 Roma tomatoes, seeded and diced 1 cup Galaxy quinoa cup Galaxy slivered almonds 1 cup Galaxy Pepitas 1 lemon, juiced 2 Tablespoons Rylstone Extra Virgin Olive Oil (EVOO) teaspoon salt tablespoon Euro Spices Lebanese spices 1. Wash quinoa, place in a pot of 1 cups of water, teaspoon salt. Bring to the boil on a medium to high heat, cover, reduce to low and cook for 15minutes. Let quinoa sit in the pot for 5 minutes. Fluff with a fork and allow to cool. 2. Blanch the kale in salted water, refresh in cold water. 3. In a pan toast pepita seeds, remove. In the same pan toast slivered almonds. 4. Combine all ingredients in a large bowl, mix well and serve. Beat the egg yolks and the sugar on a high speed for 20 minutes, or until thick and whitened. Add the mascarpone and beat until just combined but smooth. 2. Combine the coffee and alcohols. 3. Beat the eggwhites until thick peaks, then fold into the mascarpone mixture. 4. Dip the biscuits into coffee mixture and place around glass (if needing to cut biscuits to fit in glass, cut all required biscuits before). Spoon mascarpone mixture into the glass. 5. Slice eggplant 4mm thick. 2. Beat the eggs and milk. 3. Combine breadcrumbs, plain flour and parmesan cheese. 4. Dip eggplant slices in the egg mixture, followed by the breadcrumb mixture. 5. Come in and get your ingredients at #BelFrescoDrummoyne Pasta with Broccoli and Potatoes 2 small potatoes, peeled roughly chopped 1 head of broccoli, florets cut into smaller pieces... 300g Decco spaghetti 100ml Rylstone extra virgin olive oil (EVOO) 1 garlic cloves, crushed cup grated parmesan cheese 1 teaspoon Muraca Spicy Hot Cream Peppers (this is hot so its optional) 1. Bring a large pot of salted water to the boil. Add potatoes. Cook for 15 minutes 2. Add spaghetti, in the last 2 minutes of the spaghetti cooking add the broccoli. Drain Pasta, reserving a coffee mug of pasta water. 3. On a low heat in the pot add some EVVO to cover the base, garlic and chilli. Cook until the garlic is fragrant. Great served hot or cold these fritters will make you want to eat the whole batch Zucchini Fritters (frittelle di zucchini) Ingredients (Makes Approx. 24): 3 small zucchini (approx. 6 inch)... Zucchini flowers, washed and remove inner stalk, thinly sliced (optional) cup plain flour cup self raising flour 1 Tablespoon parsley, finely chopped 1 garlic clove, crushed 5 Tablespoons parmesan cheese teaspoon salt 1 egg - Cup water Method: 1. Grate zucchini, add the salt. Allow to stand for 30 minutes. Add zucchini flowers 2. Add egg, cheese, parsley, garlic, sift in the flour and add water. (If mixture is to dry add more water, and plain flour. Mixture should be a pancake consistency 3. Heat olive oil in a frying pan over medium-high heat. Drop tablespoonful measures of zucchini mixture into pan. Cook for 1 1/2 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Tag a mate that you would give Tassie to 3 teaspoons cornflour 6 Pirovic free-range egg whites ... 1 teaspoon cream of tartar 1 1/3 cups caster sugar 1 teaspoon vanilla extract 1 teaspoon white vinegar 300ml Dairy Farmers thickened cream 1 Tablespoon icing sugar 1 punnet strawberries, diced 1 punnet blueberries 1 mango diced 2 passion fruits 1. Preheat oven to 150C. Draw a 24cm (diameter) circle on a sheet of baking paper. Place, pencil-side down, on a baking tray. Dust lightly with cornflour. 2. Using an electric mixer, beat eggwhites and cream of tartar in a large bowl until soft peaks form. Add sugar, 1 tablespoon at a time, beating constantly until thick and glossy. Add cornflour with the last tablespoon of sugar. Fold through vanilla and vinegar. 3. Spoon meringue onto baking paper, using the pencil mark as a guide, with a slightly higher edge and a low centre. Bake for 1 1/4 to 1 1/2 hours or until dry and crisp. Turn off oven and open oven door. Cool completely in oven 4. Beat cream and icing sugar until stiff, spread cream over pavlova. 5. Pasta with fresh tomatoes (Serves 2) Left over tomato salad (You need approximately 1 tomato per person for the sauce) 130 grams dried egg fettuccine... 1. Boil the kettle and fill a pot with salted water to cook the pasta 2. Place left over tomato salad in a frying pan on a high heat until the oil is heated up and starts to fry 3.Turn to a medium heat using a wooden spoon break up the tomatoes, turn to a low heat 4. Cook the fettuccine according to the packet, drain. You can keep a little bit of pasta water in case your sauce has dried out 5.
