20.01.2022 A lovely Easter feast for lunch today. Slow roasted lamb in garlic, truffle oil and liquid smoke. Creamy polenta with roast vegetables and mushroom and beetroot patties. Oh and of course a lovely fresh baked garlic Vienna loaf

With so many dietary requirements it got me thinking.. make a 2 course meal.. gluten free, sugar free and vegan although these pics arent doing it justice its because the meal was so bloody tasty I forgot to take pics once I plated it up . Vegan (plant based) meatloaf with bbq glaze and a hazelnut chocolate mousse cake with whipped coconut cream... holey dooley YUM!!

Well I like to put them in the food processor and process them add Extra Virgin Olive Oil and store on a jar. Its great for using in breads, casseroles, stir fry etc

This could easily be made a vegan meal by leaving the sour cream off the plate. Theres are so tasty and nutritious, great to make extra for lunch boxes, sandwiches or even a quick healthy breakfast
