23.01.2022 This afternoon’s activity-making butter. I sourced 4 litres of beautiful local cream that was a cancelled order and short dated. It produced almost 2kg of butter and 1 litre of buttermilk. I am culturing the buttermilk and will use it as starter in other ferments. Also considering a grain free buttermilk banana bread with the $3 bag of bruised bananas I also found. 22.01.2022 I picked this up at @magicmeadowproduce a couple of weeks ago, and it is a great addition to my daily routine. It contains Whole Foods that have a rich source of vitamin C to support our immune and inflammatory pathways. Wholefood C is superior to synthetic C produced in lab as it contains all the other bits and pieces nature put there to assist with utilization. In addition to this, this powder contains pre and probiotics. The Pre Biotics (green banana flour)are foods that... our beneficial bacteria love, and the fiber also helps us by binding to toxins/spent hormones and escorting them out of your system. In conjunction with adequate water, you will have the perfect . Pro Biotics are in there too because these little guys run the show, and are transient, so we need to replenish them daily. All ancient cultures practiced this with ferments, so getting different types from live foods strengthens our system. Diversity is key! At least 80% of our immune system resides in our gut, so we need to look after it. The powder is easy to take in a glass of water, is neutral tasting and at just over a dollar a day, is a great investment to help you get on top of your game! 21.01.2022 Shrub Tonic- A shrub is an old fashioned drinking vinegar traditionally used as a thirst quencher in Colonial America. It was a way to preserve and use up overripe fruits like berries as well as an aperitif to support the production of stomach acid to improve digestion. Today it is a popular ingredient in cocktails, and is just delicious with ice and soda water as a healthy pre dinner drink. My shrub here is strawberry, mint and vanilla. Feel free to change up any of the fru...its and herbs to suit what you have and what you feel like! This makes a 1 litre jar: Ingredients: 250-375g spray free, slightly overripe strawberries A handful of mint 1 tsp vanilla or a chopped vanilla bean honey to taste ( I add about 1 TBS to a 1 Litre jar) About 750 ml raw ACV (apple cider vinegar) 1 litre Ball mason jar or other glass jar with lid Method: Sterilize jar. Take the stem off and chop strawberries and pack into jar until it is about a third to a half full. Add mint Warm the ACV and add honey & vanilla (don't overheat!) Pour into jar leaving a little headroom and cover with a cheesecloth and just the band of the lid (or a rubber band). Leave on counter overnight. The next morning, seal the jar with its proper lid. Gently upend and shake the jar whenever you go past for the next week or so. When the strawberries look "depleted" and the ACV is coloured, strain the liquid off and discard the fruit. Taste and adjust sweetness with honey. Refrigerate and serve with ice and soda. You can reduce this down to a syrup, but I find this step unnecessary and I want to keep the healing properties of the honey. Enjoy! See more

19.01.2022 There is no greater token of generosity than a gift of family prepared food. This is wild caught tuna, salted and preserved in beautiful olive oil. From ocean to table, everything done in a traditional way by the one family. This was given to me this morning by a person that I met for the first time yesterday. How’s that for good vibes! 14.01.2022 Quick early lunch today (I was hungry ). Ten minutes from concept to table. Sliced cabbage and onion, a sliced free range, nitrate free hot dog from la villa Salumi and I had some cauliflower nuggets leftover from another night (recipe from Luke Hines) that I threw into the pan. All cooked gently in olive oil and ghee. Lots of sulphur based veggies here which are great for liver detoxification, and good gut bugs loooove cabbage. Winning! What are you having?

12.01.2022 I was known as the Orange Juice Queen when I was growing up. I loved the stuff. I also had a preference for brand. Sound familiar? This 20 minute video will give you insights into how Orange juice (and all commercial juice) is engineered and manipulated to light up the reward center of your brain, keeping you addicted and wanting more. The engineering includes keeping the flavor the same from batch to batch, whilst staying within natural guidelines set out by Government. 11.01.2022 Here is this morning’s breakfast. I blitzed a whole range of veggies in thermo (you can use any food processor) and added some flavored Himalayan salt, pepper and nutritional yeast. The veggies I used were onion, garlic, spring onion, carrot, sweet potato, capsicum, cauli, broccoli & celery. I fried it off in leftover bacon fat and cultured butter (you can use butter, coconut oil, duck fat, dripping, ghee, olive oil, avocado oil-take your pick) for about 3 minutes until lightly cooked. At the same time, I fried an egg in a separate pan. Less than 10 minutes from start to finish and I have some leftover veggies for another meal. 10.01.2022 What’s cooking today? I’m making good old chicken soup. I have a bag in the freezer where I put all the leftover bones from when I roast a chicken or cook chicken with bones in. I also do this with lamb and beef. Then I make broth from it. Don’t forget to add some acid-lemon juice or ACV are my two of choice. Acid will help leach the minerals from the bones, giving you a very easily digested mineral boost! My Mum calls this Nature’s cold and flu medicine- lucky there was no s...ocials back then, she would have been banned and arrested for spreading misinformation . I still believe it is the bomb for supporting immune function through addressing nutritional deficiencies. We can look back at traditional foods and learn a lot about health supportive meals and lifestyles don’t you think? Plus it’s bloody cold here today and soup is just so comforting. 06.01.2022 This is a nutrient dense meal. It contains all the macros plus a big lot of micronutrients. This type of meal feeds your cells, allowing mitochondria to function effectively and give you energy. I’m encouraging everyone to level up their veggie intake. Try to include two different vegetables that you don’t normally eat this week. Try to make them organic so we aren’t killing our microbes with chemicals. Why? Just like investing money, diversification is key. The more varieties of fibrous foods we eat, the more varieties of microbes we have in our gut. The more varieties we have, the more robust our Microbiome is. The more robust our Microbiome is, the more robust and resilient we are. What are your two new veggies this week? Her ethics and unwavering, unapologetic stance against conflicts of interest in health and food manufacturing policy is what started me learning independently of the party line. 02.01.2022 It was a very buttery day today-I had 4 litres of out of date pure local cream that morphed first into butter, then into ghee. I had to get the twins out for this-each batch of ghee takes 2 hours in the Thermomix! Whilst it takes time, It is not labor intensive. I was able to do other work whilst it cooked. Ghee is clarified butter-it has all milk solids removed leaving just pure, healthy fat. It is stable at both room temperature and high temperature and is able to be consumed even by lots of people who are sensitive to dairy. This is real food- supportive of real human health. 02.01.2022 It’s getting cold in the mornings here, and sometimes I like a quick porridge for breakfast. This one is post workout so a few fruit carbs in there, but it’s delicious without. Traditionally porridge is made with oats, which are very high in carbohydrates and insulin & blood sugar spiking. Oats are also a very common cross reactive food to those with gluten sensitivity, and can create a blood sugar spike, followed by a crash soon after, leaving you with that emergen...cy need to eat again. This recipe is very nutrient dense, with proteins, good fats and lots of trace minerals, while still giving you that comfort that we seek on cold mornings. Plus you can grind up a weekly batch ahead and just add boiling water to make it each morning. Winner for when you need to get out the door quickly, or to take to work if you start early. Porridge (serves 2) 1/4 cup walnuts or pecans (or a mix of both) 1/4 cup coconut (shredded or desiccated) 1 TBS chia seeds 1 TBS flax seeds 1 tsp cinnamon 1/2 tsp sea salt 1 cup boiling water Put all dry ingredients into a processor/blender and grind until crumb like. Add boiling water, mix and divide into 2 bowls. Let sit for a minute to thicken. Top with coconut milk, berries, fruit or whatever you like and enjoy! See more

02.01.2022 It is true that sometimes you need both-apply the life jacket to the host (fish) whilst you fix the the terrain (water). However, it is NEVER not about the terrain. As humans we wield extraordinary power and influence over our terrain. Our thoughts, perceptions, actions, reactions, nutrition, beliefs and lifestyle are all part of our terrain. Be honest with yourself, sit with the uncomfortable and inconvenient truth. Are you doing everything you can to exert positive influe...nce on your life? Or are you sitting fearful, wide eyed and impotent, waiting for the Government or some other expert to save you so that you don’t have to take responsibility for anything that may backfire? Go ahead-walk in the light-empower yourself to make positive but small steps every day to help clear the water as only then will your Earth Body follow suit.
