If you haven't yet received your CSA info pack and application form, then get in touch by emailing us at [email protected] Just 1 day in and 40% of CSA shares are allocated already!... CSA shares are limited to our community from Atherton Tablelands and Cairns northern beaches, through all town south to Townsville.

24.01.2022 Thanks to these fine looking fellas at Tiny Mountain Brewery, we're able to use their spent brewing grain to feed our growing meat chooks! What would normally go to landfill is instead diverted and used to produce our uncommonly delicious chicken. One of the many ways we are not only eliminating waste in our community, but using it to produce amazing food! 21.01.2022 CSA FAQ #3 Can I get some tips and recipes to get the most out of 1 whole chicken / I am a bit worried about what to do with the feet, and have never cooked gizzards or heart before! A. Never fear! All CSA members will be provided with cooking support, suggestions and recipes! And being a part of a community, we encourage you all to share your tips, tricks and recipes amongst each other on the CSA member only FB page - hey, there’s a few chefs and truly incredible home-cooks in the CSA, so we also can’t wait to learn more! I mean just check out this incredible dish prepared by Philip-Jon, someone who's been championing whole-bird cookery from his first order! Pollo en Pepitoria (chicken in saffron sauce, served with potatoes with chorizo, chilli and paprika).

16.01.2022 CSA FAQ #1 So, what if we’re going to be away for the CSA delivery that day/week? (holidays, etc) A. We've checked out what some of our friends running CSAs do, and thought what could we realistically achieve, works for our eaters, and here's what we've come up with. You could either: - Check in with your hub host to see if they can hold your chook until you can collect it (if it's just the CSA delivery day you can't make); or - Pay it forward -> gift your share to a neighbou...r, family member or deserving friend. Just let them know about the delivery date, time, and pickup details and we’ll make sure they get your share; or - Ask the other CSA members in your community/delivery hub so see if they’d like to have your share for that week. It’s up to you if money exchanges hands, if so how much, or if you barter something else; or - Postpone your CSA delivery until your next scheduled delivery date. Please give us a weeks notice, and we will still process your bird, but pop it in the freezer. It’ll accompany your next delivery; or finally - Let us know you want to feed the community, and we’ll provide your bird to Meals on Wheels in Ingham. Your chicken will nourish those most in need in our community. Do you good folks have any other suggestions - if you we'd love to hear it!!

16.01.2022 Time to dispel a few untruths! 1. I can taste your chicken at xxx pub/restaurant right? It's on their menu. 2. You guys don't sell to home shoppers. 3. Your chicken is only sold to CSA members.... All wrong! 1. We've recently found out a local establishment has our chicken on their menu, and we're not happy. Other than NOA in Edge Hill, we've not sold a single breast/cut, or a whole chicken to any pubs, restaurants or resorts since the 1st week of February. So if you've been told over the last many months that you're eating our chicken, well sorry but you've been ripped off, and we've been misrepresented! Not happy Jan! 2. Since COVID shut the hospitality industry back in March, and aside from the NOA special event, we've only sold to home shoppers!! Just everyday folks wanting to eat uncommonly delicious chicken. 3. And non CSA folks can still buy our chicken! Availability of cuts and offal is scarce, but there's whole birds available for Christmas. Thanks all for your support! 11.01.2022 CSA FAQ #2 Is it possible to not charge extra to have the bird cut up? A. I’d love to be able to break down a whole bird into pieces in 30 seconds, but I am still not that quick! Our proposed cut fee of $3.50 covers 6-7 minutes of labour to break down each bird into wings, marylands, breasts, tenderloins, and frame with neck & feet, and the time to bag all of this up & vacuum seal. Also, just for our CSA folks, we’ll be sending around an informational video clip on how to break down your own bird, and will teach you all this great skill at the CSA members day on farm!

09.01.2022 I took some time our of my hectic schedule to spend a weekend with these amazing folks. I don't really have 2 days to spare, but I've been busting to get into syntropics for quite a while, and the time is right. Syntropics is a food production system like nothing I've ever seen. Eucalyptus trees planted in the same hole as a banana tree, surrounded by capsicum, eggplants, pomegranates, lettuce, corn, and a myriad of other plant species. All working together, with an aim to m...aximize the quality and quantity of consolidated life. Such abundance, which our gracious hosts also exuded! 06.01.2022 Our first lot of CSA applications forms are out, rest coming soon! To clarify - 1 CSA share is 4 chickens (total!), with one delivered every 3 weeks, and 2 CSA shares is 8 chickens (total!), with two delivered every 3 weeks!! Sorry for the confusion

04.01.2022 CSA update - last one before we launch! We've had a bit on these last few weeks, and had to double and triple check numbers before we were happy. But the time is here - next week the CSA will officially open and we'll be taking orders! It'll strictly be on a first in best dressed basis, limited to 2 shades per household. Your share will consist of a fresh whole bird, delivered to your nearest hub every 3 weeks. We're trialing for 3 months this time around - to make sure it's right for y'all and us. If you've already done the CSA survey or sent an expression of interest, we'll be in touch in the next few days with all details and your application form. 04.01.2022 Last CSA shares, going... going... If you're a current CSA member and want more chicken delivered every 3 weeks, or wanting to join the awesome CSA family - then get in touch now! You nominate your price (recommended $57.26 per bird plus delivery), and we process to order and deliver your chicken share every 3 weeks. Each CSA "share" you opt in for gets you a whole chicken for every delivery round (whole or portioned - you choose). You're committing for a total of 3 deliverie...s, which carries through until just before Christmas. We expect average bird weight to be around 2.77kg throughout this CSA period. Cairns delivery this Saturday 24th October, and Townsville in 2 and a bit weeks... If you're in Cairns, the Tablelands or Mission Beach and can't commit to a CSA share right not but want some chicken, then get in touch ASAP too - we have limited stock available. Thanks folks! 02.01.2022 CSA shares still available! (just a few) Hey folks, there's still a few CSA shares available for the Townsville region, and also for the Cairns/Tablelands/Mission Beach region. We sent out a big information pack to those that were interested, but here it is simplified: - for each full CSA share you request, you get one chicken delivered every 3 weeks (fresh, refrigerated) - it can be left whole, or we will cut it up into pieces for you... - the size of each bird will vary between deliveries, but should average around 2.77 kg which is our long-term bird average size - you name your price! Our recommended price of $57.26 per bird is our cost to produce - you are committing upfront to the next 4 deliveries (Townsville) or 3 deliveries ( Cairns / Tablelands / Mission Beach), basically up to the middle of December - pick up is from a hub close to you. If you can't make the specified time, no worries as we have ways to handle that! Any questions, or if you're interested, get in touch now!

02.01.2022 CSA Update #...ahhh... Ok - we've been a bit quiet on the CSA front as we churn through the feedback, double check our numbers, and prepare to launch! We're going to be upfront and let y'all know now that there's going to be some unhappy eaters out there - we do not have enough birds to meet the demand! And we have also been experiencing reduced hatch rates for the last month, which we are yet to resolve.... Keeping all this in mind, we're still committing to launching the CSA this month, but with limited CSA shares, and one significant change - we're going to go for a 3-month term for this round. So we can try it, you can try it, and we can sort out our hatching issues ready for CSA round #2. All shares we release in this CSA round will have birds already hatched and on the ground, and therefore we're sure you'll all get your 4 chooks over that 3 month period. We figure better off to launch, start small, learn and improve - and thanks for joining us on the journey
