12.01.2022 Our Executive Chef, Ashley, has created this delicious White Christmas Slice to share with the families of our residents to help bring festive feelings to your kitchen. Ingredients 500g white cooking chocolate 1 cup rice bubbles... 100g red glace cherries 100g green glace cherries 1 tsp Almond Essence (optional) cup slivered almonds cup shelled pistachio nuts 75g sultanas 1 cup sundried cranberries 1 cup (90g) desiccated coconut 1 teaspoon vanilla extract Method 1. Preheat an oven to 160C. Place chocolate in a metal bowl and place over a water bath on the stove to melt, stirring regularly. 2. Place both types of nuts on a baking tray and gently roast for 10-12 minutes; remove and allow to cool to room temperature. 3. Add all remaining ingredients to the melted chocolate and stir well until combined. 4. Line a shallow baking tin or dish with baking paper. Pour chocolate mixture into tray, spreading evenly into the corners. 5. Place a sheet of baking paper over the mix and press down firmly, to ensure there are no air bubbles. 6.
