23.01.2022 RECIPE Last night’s dinner: Green Pea Avocado Pesto with Delicious Potatoes! Inspired by @cookingforpeanuts Make sure to watch my Insta Story to see how I made this flavourful creation! It was seriously so good - I can’t wait to have it again! ... Pesto: 1. Blend 2 minced garlic cloves, 1 large avocado, 3tbsp fresh lemon juice, 1/4Cup pinenuts, handful basil leaves, 1 Cup defrosted green peas, 3tbsp nutritional yeast & 1/2Cup of water. Sprinkle paprika on top for seasoning! 2. Cut 4 large potatoes of your choice into small segments. Season with garlic powder, onion powder and paprika! Roast potatoes in oven @220C until golden brown (about 20mins) Enjoy!!

22.01.2022 Currently working out what meals I’ll make this week to put together a shopping list to ‘click and collect’ tomorrow (biggest time-saver ever!!) I find that when I have meals already in mind, it’s much easier to eat healthily than trying to make something work from what’s already in the cupboard. For me, preparation is key! What do you find helps you make better food choices? I’d love to hear in the comments below!

14.01.2022 What’s in my fridge/cupboard?! We all know that you can’t out train a bad diet, but there’s lots of misconception surrounding what a ‘good’ diet actually looks like! Let me start off by saying, that I don’t believe in diets at all! That is to say, that if a diet isn’t sustainable long-term, then it’s likely going to do more harm than good - and you might just find yourself trapped in a cycle of yo-yo dieting ... While this is far too broad a topic to be able to discuss in-depth in a Facebook post, research has shown time and time again that the ‘diet’ that has the best health outcomes at all stages of life is one that consists of whole foods and is plant based! This is the way of eating that I have personally adopted and I LOVE it! Over the coming months as I continue my research/study, I’ll be sharing more info around this, including my favourite healthy meal ideas! For now, if you are wanting to learn more about it, then I definitely recommend checking out Plant Proof - a scientific-based resource full of valuable info regarding this topic A great place to get started! 07.01.2022 Time for some real talk... Now that we’re in June and are officially half-way through the year, I became a little disheartened thinking about the goals I had set at the beginning of the year, and how unattainable they now felt. Life is hard. It’s uncontrollable; unpredictable. Some weeks I feel like I’m killing it! Others I get discouraged and wonder how I’ll ever achieve everything I set out to do.... I am my own worst critic. I find it so hard to balance life and the busyness it entails! But reading this quote today really resonated with me, and reminded me why I started in the first place: to help others. Your health is the most precious gift you have, and there’s so much misinformation out there surrounding it! It’s my goal to help others in their journey towards a healthier lifestyle holistically, and I need to practise what I preach in being kinder to myself as I work towards achieving this goal. Maybe you’re feeling like I’ve shared tonight. You’ve got a goal you’ve worked so hard to achieve, but find yourself doubting your ability to get there. This reminder is for you, as much as it is for me: - You are capable. - You are stronger than you think. - You are enough. Be kinder towards yourself. 05.01.2022 FOOD HAUL This is more or less what our weekly food shop looks like! A diverse range of whole, plant-based foods! Our cupboard is also full of whole-grains, legumes, nuts and seeds to ensure we’re not missing out on any important nutrients. I LOVE eating the rainbow! I just wish this haul contained less plastic, and that farmer’s markets were more accessible to where we live What’s your favourite fruit or veg? I personally can never have enough berries!

04.01.2022 Nourish Bowls Nourish bowls are seriously one of my favourite meals to make! Not only can they be made in a variety of ways, but they’re the easiest way to eat a vast array of plant foods! Packed full of nutrients, they’re super tasty too! This bowl is made from chick peas, black beans, cashews, tempeh, capsicum, sweat peas, cucumber, tomato, pumpkin, cranberries and pepitas What’s your favourite plant-based meal?!
03.01.2022 Had an awesome time at the @newcastle.veganmarket this morning! So great to see such an amazing variety of delicious plant-based foods! Including this scrumptious ‘cookie butter’ ice cream (without the cream, or butter! Hehe) I also LOVE how intentionally pup-friendly it was - if you love cute puppers as much as I do, then I definitely recommend coming along to check it out! In addition to adorable puppies and delicious food, it was so great to see an emphasis on incorporating sustainable living into your daily life! I love that in being mindful of your own health, you can be mindful of the planet’s ‘health’ too!
