09.01.2022 Satisfy your cravings this weekend with Amy’s delightful Paleo Rocky Road Recipe! Ingredients: 100g dry roasted almonds ... 100g shelled pistachios 200g dried apricots 50g dried cranberries 35g coconut flakes (1/2 in rocky road, 1/2 on top) 1/2 cup coconut oil melted 2tbsp cacao powder 2tsp coconut sugar 1tsp rice malt syrup 100g melted dark chocolate 1. Roughly chop the dried apricots and almonds (you still want fairly big chunks so only slightly chop) 2. Combine all the nuts and dried fruit in a large mixing bowl and stir. 3. In a small pot (on low heat) add the melted coconut oil, cacao powder, coconut sugar & rice malt syrup. Stir until melted. 4. Line a small rectangular tray with baking paper. Pour about 2/3 of the dried fruit and nut mixture into the tray. Pour over all of the chocolate sauce and mix until just coated. Then add the remaining dried fruit/nuts and continue to stir until all is evenly coated. Press down so it evenly covers the whole tray. 5. Melt the block of dark chocolate in the same pot and then drizzle all over the top of the rocky road. Sprinkle over remaining coconut flakes. 6. Place in fridge for at least an hour until set (longer the better) and then roughly cut or break apart into desired sizes.

Here are 5 mindful things you can do in 3 minutes while waiting to make your next cup of coffee or tea: 1) Take 10 slow and deep breaths to help calm and relax your body -Six slow counts in, pause at the top of the breath for two counts, then finish with six slow counts out. 2) Do a mini workout to boost your circulation and metabolism This can be as simple as 30 squats, but you can get creative! ... 3) Give yourself a little massage to reset for the day take your favourite massage oil and give your neck, shoulders, or feet a massage for 3 minutes. 4) Write out a daily checklist to give you clarity for the day list your top 10 priorities to help better structure your time. 5) Nurture your kindness Sometimes it’s better to give than receive so take these 3 minutes to mindfully water your plants, comfort a loved one or give your puppy a belly rub.
