24.01.2022 I LOVE MINCE PIES! Not everyone does. And I can understand that. If it's too much pastry, raw, or crumbly. If the fruit mince is below par, they are not much chop. I do love them with a dollop of cream for a breakfast - what? it's fruit!

Greek semolina custard, cooked inside layers of buttered filo pastry, then hot out of the oven, l drown it in cold lemony cinnamonny honey sugar syrup with a splash of orange blossom and vanilla. Don't look. It's revolting.

22.01.2022 How's your slow cooker repertoire? Have you ticked off everything you wanted to perfect this winter? I can smell summer barbeques from here, but there is still time to get a few more winter favourites for the chilly nights to come. I'm waiting for that first mango! Before that, it's time to start swapping that gravy for a lighter flavour. Think chunky vinaigrettes and lots more greens. You've perfected all the tray roasting vegies over winter, to bring the vitamins to the pa...rty, here's a few ideas to get the spring in your prep. Add a cup of cooked french lentils, mint leaves & finely sliced raw celery to a mustard dressing to shake over roasted chicken & beetroot. Loosen tahini with a little hot water & lemon juice. With a tray bake of lamb shoulder, chick peas & red peppers, plonked onto spinach leaves & fresh coriander is perky. Mashed pumpkin added to plain yoghurt, toasted pepitas & slivered almonds makes a great plop onto grainy bread, poached eggs & shiny pomegranate for a groovy brunch. Even bacon cooked with a little maple syrup works well with this. Green on the side to match the new growth on the outside. You've learnt so much this winter, so keep going. It doesn't need to be fancy or insta worthy. It gets to make you proud of your handy work, taste happy to you, and keep you cooking! See more

21.01.2022 I've got 6 bags.yum!! Plus a bunch of ready to heat lamb shanks. If you are staying in this weekend, and need a few dishes, this is what I've got available for pick up.... Persian Chicken (gluten & dairy free) $36 Junee Lamb Shanks $50 Beef Cheeks with stout $50 Each dish enough for 4 adults. I'm in the kitchen Friday from 10am, and if I can get my square tappy thing to work, easy to pay on the day!! Quince, do you want some? I can sell by weight, $35 a kilo. And a bag is about 1.4 to 1.7 a kilo. So yes, its exxy. There's the posh Madagascar vanilla in there as well. They go very well in a frangipane tart. Or layered with mascarpone & pound cake. Smeared on to crackers with Gorgonzola. Added to a sauce with roasted pork. Mixed half and half for a next level apple crumble.

18.01.2022 Last week we organised catering for a pick-up order - and an insta story from a guest mentioned that they had picked up the order from my house. I don't work out of home unless it's a home day with admin & quotes with slippers. We work in a commercial kitchen - not a restaurant kitchen - which again is different. Commercial rent, insurance, utilities, with a commercial fit-out.... There are caterers who work from council certified home setups, the great thing about these caterers is their prices can be fantastic for budgets. They will show you certification, safe food handling & qualifications on request. I love my big kitchen, covid check-in, hand washing on entry, ovens, fridges & freezers, and lots of stainless steel bench space. I even paid for a purpose-built cool room in my storeroom for safe food storage. Anyway, just thought you should know. Bernadette.

I hope your cooking is plain & simple. Its handy to meal plan at times like this to have some surety in place. I would consider weekend cooking as the time to stay in and create. Make a takeaway dinner on a night not usually the time out night. I like breakfast for dinner, eggs and corn fritters with sausage, then big bowl of chocolate coco pops for dessert. Even jump into the pyjamas early! Its a super cold week for you, so a giant pot of soup, a slow roasted lamb, and saucey puddings would be my treat. Long life cream exists, . 14.01.2022 I remember Kermit, and his 'its not easy being green'. This is easy, and delicious. Separate blanching of green beans, cavalo Nero & broccolini. Sauteed zucchini, tossed with white beans, and a dressing with roasted pecans, Alto mandarin flavoured olive oil, and forvm Chardonnay vinaigrette. Lovely cold or hot.

With cream cheese frosting, slivered green pistachios, syrup drenched dried apricots, and date syrup.... What could I make to top these.... Delivery from our kitchen, a few bite sized canapes while guests arrive and get comfortable. Little morsels like chicken sandwiches-the crustless posh kind. Fresh crunchy rice paper rolls, elegant tartlets, peeled prawns, and a couple of hot items. I made super juicy lamb kofte, crunchy coconut prawns and everyone's favourite, asparagus & haloumi ribboned wi...th pancetta. A bronzed kurobuta ham with fresh bread from brasserie bread -especially for #freshbreaddad and my latest batch of zucchini relish. All delivered, with notes for heating, and we disappeared before guests arrive. It keeps your bubble intact, saves time, money and fridge space. We even help with hiring glasses and drinks tubs.
