21.01.2022 Australia Day Specials See Bessie for a LAMINGTON ICECREAM SUNDAE this Australia Day History: The lamington is as Australian as meat pies, kangaroos and Holden cars, ranking lamingtons alongside the other true Australian icons of the peach melba and Vegemite.... This Australian culinary icon, which consists of sponge cake dipped in chocolate and liberally sprinkled with fine desiccated coconut, is believed to have been created through an accident at work by a maid-servant to Lord Lamington, the thoroughly-British eighth Governor of Queensland. The maid-servant was working at Government House in Brisbane when she accidentally dropped the Governor’s favourite sponge cake into some melted chocolate. Lord Lamington was not a person of wasteful habits and suggested that it be dipped in coconut to cover the chocolate to avoid messy fingers. Being one of the very first mobile vendors of his time, he sold gelato around the streets of Melbourne, as well as at festivals and other events for over 30 years. Francesco had a significant influence on his three sons Joe, Pat and Michael and they too entered into the mobile vending business working alongside th...eir father. Keen to progress however, in 1993 the brothers purchased their very first archaic and labour intensive semi-automatic cone-baking oven, producing traditional single and double wafer cones. In 1994, they travelled to Europe, upgrading their equipment to a full baking oven. This allowed them to approach independent supermarkets, cafés, yoghurt shops and ice cream and gelato bars across Victoria & Australia.
