There are the usual known tricks of extra garlic, ginger, herbs and spices. But my secret weapon is rice wine vinegar - super low in sodium and kilojoules - Try mixing this with smaller quantities of the high sodium Asian sauces (eg soy, oyster, hoisin sauce, etc), it helps to extend the flavour and quantity of sauce so you can still enjoy a great tasting, saucy stir-fry!
