PARDAS Sus Scrofa is made from Sumoll cultivated in two farms that have been planted for more than 60 years on clayey-calcareous and sandy soils. They are using a sustainable agriculture with little intervention and all harvest by hand. Destemmed and macerated at a controlled temperature, fermented with local yeasts in stainless steel deposits at 20C then aged in concrete deposits for 4 months. A blend of Trajadura, Loureiro, Arinto and Azal is a young, fresh, crisp and a little fizzy wine with generous lime and stone fruit aromas. This wine is produced with carefully selected grapes from the best vineyards of the Vinhos Verdes Region the most extensive in Portugal. The grapes are pressed at low temperatures and the must is then clarified and fermented at controlled temperatures. Before bottling, the wine is filtered and cold stabilized. #bibowinebar #winelist
