25.01.2022 ZINC Zinc is an essential mineral that is required in over 300 enzymatic reactions throughout the body. Your body can’t make or store Zinc, which means you must obtain it regularly through your diet. Zinc is essential for immune function, skin & tissue repair, wound healing, growth and repair, the production of digestive enzymes, hormone production, and is essential in the production of the enzymes crucial for proper taste and smell. I see a lot of zinc deficiency symptoms i...n my clinical practice. The indicators for Zinc Deficiency in Kids include: - low immunity- getting sick all the time. - low appetite or are picky eaters, - dry flaky skin or eczema, - white spots on the nails - focus/ attention issues, sensory issues- irritated by clothing etc. - other food sensitivies or digestion problems. In Adults- Thinning hair, reflux, low stomach acid, poor wound healing, reduced libido. In teens, acne, mood and concentration problems can manifest, due to the high zinc requirement in the production of hormones, particularly Testosterone. Zinc supplements are an easy and inexpensive way to increase your Zinc levels- It’s best to see a qualified health practitioner to be recommended a good quality bioavailable supplement and the right dosage for you. AND it is equally important to include Zinc rich foods in your diet. A study by the CSIRO found that 67% of Australian men and 85% of women did not have enough Zinc in their daily diets. Zinc rich foods include: Oysters and shellfish like crab & lobster Grass Fed Beef & lamb Pumpkin seeds (pepitas), sunflower and hemp seeds. 25.01.2022 There’s always room for more plants in your diet. The benefits to both your health, the health of your very helpful gut buggies and your tastebuds are many! Here’s a couple of options for brunch/ breaky/ lunch. Spelt sourdough toast with smooshed banana, sliced strawbs, pecans and cinnamon. Or smooshed avo, spinach leaves, lemon juice, pepitas and dukkah . Winning combos of diversity and deliciousness. How bout rather than some crazy full on exclusions in your diet- try some inclusions instead. More plants on your plate. Aim for 20 diff plant foods a day! Start each meal with at least 80% of your plate as plants and you will feel the benefits almost straight away! Xx

23.01.2022 My super kaley salad with haloumi and soaked cranberries makes a deelish addition to your Christmas table- with nuts, seeds and chickpeas it makes sure the vegetarians and vegans at your table feel very well fed (swap the haloumi for vegan feta). It's also a lovely meal in itself and so very impressive on a platter as a "just bring a salad" option to group BBQ get togethers. 22.01.2022 My cheesy veggie muffins are a great lunch for remote learners and work from homers on cold rainy winter days, 15 mins to whip up and 25 mins in the oven. Warm, nourishing and delicious and so much more inviting than a sad sandwich! We have these often, and I sometimes just use whatever veg is handy- sometimes corn, sometimes pumpkin, or beetroot, but the carrot, zuchini, spinach & thyme is our classic go to. Tonights is silverbeet & wild rocket from my garden, & a head of brocoli that has had a little swim in boiling water for less than 1 min. Chickpeas and easy, cheap and absolutely delish, with a buttery nutty flavour and creamy texture. A great source of vegetarian protein, thats also high in gut buggie feeding fibre. Adding chickpeas to you diet can help with improving regular bowel movements and regulating blood sugar levels. Give them a whirl- go on! If you throw in a couple of hard boiled googies you have yourself a whole meal. This is mine from my boxing day spread. Its potato with curry mayo, rocket,dill, fried capers. Vegan Muligatawny soup - recipe from @smithanddaughters @smithanddeli vegan book, and followed up with pumpkin & lentil sausage rolls, using @caremepastry spelt butter puff, and leafy greens. The kids were super pumped about the flaky buttery pastry rolls, and gobbled them up, but sadly only got a 2/5 for the meal. So back to the drawing board on this one folks! Im not going to even tell them that tommorow nights pulled pork tacos are actually jackfruit! MoooHahahahaha! 15.01.2022 Knocked up this fun sweet & crunchy little salad for lunch yesterday. Sugar snap peas chopped, 1 cobb of corn kernals burnished in a dry pan, a little crumble of feta, and some sliced cooked chicken. Dressing of apple cider vinegar, olive oil and juice of half an orange, salt and pepper. It was delish. Would be nice added to a big bowl of leafy greens. 11.01.2022 A delicious summer dinner. Fish tacos I took a kg of super fresh rocking sliced it up and tossed it in a bag with 2 tabspns of rice flour, 2 tablespoons of @wildings_pantry Spanish style spice mix, and a pinch of murray river salt flakes. Shake it in a baggie, and set aside in the fridge to just chill and think about life, while you slice up a tasty bowl of fresh veg. Today I had some butter lettuce, cucumber, gherkin, julienned red capsicum, avocado, corriander leaves, cherr...y tomatos, sugar snap peas. Mix a blob of good quality mayo with the juice of half a lime and chopp up a nice red chilli. Heat up some GF white corn tortillas. Heat a little olive oil in a non stick pan and add the fish pieces- pan fry until golden- bout 10mins. Roll them all up and gobble! Goes really well with a glass of chilled rose and an ocean view. 06.01.2022 Wishing you all a very restful and rejuvenating festive time and summer break. After a pretty challenging year, (as its been for so many) Ive been in a sad old low slump. But Im really looking forward to a summer break with my beautiful husbandido and babies, lots of sunshine, beachtime, jigsaws and novels. 02.01.2022 Salmon corn and greens tray bake. Super easy dinner. Remove corn from 4 cobbs. Char corn under a hot grill and set aside. In a bowl, Combine juice of 3 limes , a 1/4 cup of olive oil, a teaspoon each of ground corriander, cumin, tumeric and dried chipotle chilli powder, a good pinch of mineral salt and ground black pepper, whisk together and then rub half of this all over 4 salmon fillets skin on. Place half the charred corn, and half a punnet of cherry toms cut in half, int...o a baking paper lined oven tray, place the salmon skin side up on top. Pop into oven at 200degrees for 20mins. While the salmon is cooking make a salsa with fresh corriander leaves chopped, the rest of the charred corn and dress with the other half of the olive oil line juice spice mix. blanch some green beans and asparagus, and set aside. When the salmon is cooked, remove the oven and toss through the cooked beans, asparagus and salsa and a handful of spinach leaves and take to the table. I made this last night. 5/5 liked it! So thats a win!
