22.01.2022 Sunday night dinner. Hervey Bay Scallops Scarlet Prawns Yellowfin Tuna Tasmanian tumbled Octopus... Brown rice, cucumber, avo and cherry tomatoes Wasabi, Japanese chilli paste and Japanese mayo. Simple, delicious and healthy. I threw the prawn heads in the water with the rice while it cooked for extra depth and flavour. They are too good to waste!

The can tell the story. They should be round, not sunken, glossy, clear and not milky. The more sunken the eye is the older the fish is, which is not always a bad thing if its been dry aged properly and not left sitting in a wet esky. Milky eyes is normally a case of badly handled, normally not chilled correctly, left in brine or slurry too long or not long enough, brined at wrong temperature or frozen during the process. In the case of coral trout bulging eyes is a sure sign the fish has been caught in deeper water and suffered baratrauma on the way up, which is similar to the benze where air pressure builds up in the body and head causing the eyes to bulge out, not effecting eating qualitys.
