23.01.2022 2 hours into massive Xmas Eve bake and today’s MVP was @80frog bringing me hot chips on his way into work if anyone knows me a little they know I have a slightly ridiculous potato obsession. Thanks to all our wonderful customers for all our amazing orders and support leading up Christmas. Today we baked 125 sourdoughs, 400 bread rolls and 115 loaves of bread (including extra little bakes to replace some baker misfortunes ) We have such a strong and wonderful team who all worked so hard to get through the long hours and huge production . 22.01.2022 Greetings to you all. Its been quite some time since we have been active on our socials. ( we are sooooo busy and need to share some info) Just want to say thanks for all the amazing love and support from you all. W.A has certainly started to come out to the regions and we are working around the clock at Bakehaus central to keep up with all the sampling, snacking and feasting you all are enjoying. ... We understand it can be very busy in here at certain times of the day and week, but rest assure we are doing our absolute best we can do. Thanks to everyone practicing the physical distancing and following the arrows in the building and all the way to the exit door. Sometimes we all forget but lets be patient with each other and also kind. We wanted to also explain some of the things we are doing to keep yourselves safe, our staff safe and also keep our prices affordable. We have dedicated cleaning colours and anti viral, sanitizers and cleaning policies (in line with the health dept.) to maintain our surfaces clean, products safe and employees trained. We have specialized contractors to clean our facilities and offer hand sanitizers for you all to use coming in the cafe and also at our POS terminals. We have made the decision to use takeaway and single use serving dishes for dine in. We know this has upset some of our customers but we wanted to just explain it a little. Our reasoning is we have had such an increase to the cost in almost every ingredient as well the sheer cost to maintain the cleaning requirement so we need to try hold on and stop the increase cost to the customers. We are trying to keep as many of our products affordable to all our customers (especially in these hard times and for families) and maintain our policy to buy West Aussie and local ingredients. We love our farmers and their amazing produce. We have not done this in any way to cull or reduce employment here in fact we have increased our employment and are very proud to employ 39 people. This is 8 more prior to the pandemic and lockdown period :) COVID-19 has certainly made the world a different place but we are so very grateful to be in Western Australia and have such an incredible bunch of loyal and supportive customers, staff and partners to get us though it all. Thank you all so much again and standing by us and holding us up over the last hectic months. The part time position (20 - 30 hours per week) will require someone who can work well in a fast paced and busy environment, primarily on weekdays with the possibility of weekend work. The position requires early starts between 6am - 9am with potential for more hours for the right applicant. 10.01.2022 Beautiful scoring on beautiful bread There is a technical reason behind these artistic and signature slashing for us baker folk. When the wonderful process of fermentation occurs and all the carbon dioxide gases build up inside a masterly moulded dough piece and create these risen (proof) breads ready to be baked, we need to control the oven spring that occurs. Once entering a super hot oven at 240 degrees the big gas expansion can cause a blowout without a cut. Shallow cuts on the dough prior to oven loading can prevent this. Its such a beautiful process of baking bread and the science behind it. Still makes me happy inside seeing this everyday #littlethings

A classical Viennese technique but with a Scandinavian decadence. 03.01.2022 Hi all just a bit of a query if anyone was parked or in the vicinity in the gravel carpark (old bakery building side) around midday and noticed an incident of a person walking their dogs and verbally abusing and threatening to slash some tyres at local seniors. On returning to their car the back side window had been smashed. Police have been notified we just want to do a call out for any witnesses to this awful kind of behaviour.

02.01.2022 Our favourite couple, the wonderful John and Bev Lowe’s of Moort care, have been helping the less fortunate and vulnerable of Perth for the last 20 years and it gives us great joy to be able to provide 105 Christmas treat boxes for their Christmas hampers, for some of Perth’s homeless on Christmas day. Our community far and wide also helped to fill 2 very large tubs of much needed toiletries and sundries . Thanks @chitteringshire for putting a workplace collection toge...ther and @mauri_australia and @bakelsau for always at the ready for ingredients to make it happen at Bakehaus Christmas central kitchen.
