25.01.2022 Stunning view from today’s office Been down to Bindoon CBD got meself some beauties from @northernvalleyslocavore ; Bindoon asparagus, cold pressed juice and gorgeous biodynamic Chittering veggies Might be my day out of the Bakehaus kitchen but it’s where inspo food dreams begin and this freshly in season asparagus is definitely going to be in some new fresh spring products. Fermented doughs, mechanical and panary aeration and how through lamination it makes such a beautiful end result these roasted local apricots and creme patisserie were custom made for the 2020 Chittering chamber of commerce AGM breakfast event yesterday. 23.01.2022 We’re looking for an experienced kitchen hand / short order cook / Sandwich Artist to join our lively team at the Bindoon Bakehaus. The part time position (20 - 30 hours per week) will require someone who can work well in a fast paced and busy environment, primarily on weekdays with the possibility of weekend work. The position requires early starts between 6am - 9am with potential for more hours for the right applicant. The successful applicant will: - Be a reliable team pla...yer - Be able to work quickly and consistently - Be able to deliver a high level of customer service - Have excellent knowledge of food safety and hygiene - Have related work experience in the food or hospitality industry As we are situated in the town of Bindoon, applicants must have their own driver’s licence and private transport available. Only Australian residents will be considered. 19.01.2022 27 years ago I was already embedded into bread baking at my fathers German bakery. He was was old school and everything was done manually. It was tough, heavy and gruelling. Sugar bags were 35 kgs Fondant 30kg and Flour 25kg. I recall a flour delivery man saying to my father. You have a girl baking bread for you? She won’t last Without incriminating my dear father the response to said delivery person was one of anger and a statement that. She is just as strong an...d good a baker as any man any of our long term baking associates would know what kind of respect and reputation Big German Raimund had in Perth baking. One other instrumental baking recollection early on was being told in 2000 that 2 gay girls in their early 20s can’t run a bakery in Bindoon. They won’t last. Today marks international women’s day. The theme is #choosetochallenge We took a little bakery and made ourselves into an experience of bakery delights and superb customer service. We never took on too many of the naysayers advice or the put downs. We continued to create opportunities for women and contribute to women in baking. I learned pastry off an admirable and honourable woman in New Zealand, and was empowered to challenge the male dominated industry of the mid nineties. 17.01.2022 2 hours into massive Xmas Eve bake and today’s MVP was @80frog bringing me hot chips on his way into work if anyone knows me a little they know I have a slightly ridiculous potato obsession. Thanks to all our wonderful customers for all our amazing orders and support leading up Christmas. Today we baked 125 sourdoughs, 400 bread rolls and 115 loaves of bread (including extra little bakes to replace some baker misfortunes ) We have such a strong and wonderful team who all worked so hard to get through the long hours and huge production . We have pledged 100 Xmas treat boxes for 100 of Perth’s streeties for Christmas Day. In collaboration with the legends at @moortcare and with the generosity of @bakelsau and @wardpackaging (and their kindness still from a previous year). Also with our bakers assisting and team packing them up for delivery. We would love to be able to take more. If you ...would like us to take any (new) toiletries such as toothbrushes, toothpaste, deodorant or ladies items we can take them with the goodies. Anything small will be appreciated. 11.01.2022 You know we love to support each other in Bindoon businesses. This week I got the opportunity to pass on some pastry knowledge and offer a cool collaboration with our local butcher Jason. I’m showing the amazing Jordon how to crimp pastry edges for their amazing lamb Jumbuck pies. This place is where you can get a good bit of banter and super quality meats locally sourced and creating skills and opportunities for the future. As well as using our scratch made puff pastry from the Bakehaus bakers.

01.01.2022 Beautiful scoring on beautiful bread There is a technical reason behind these artistic and signature slashing for us baker folk. When the wonderful process of fermentation occurs and all the carbon dioxide gases build up inside a masterly moulded dough piece and create these risen (proof) breads ready to be baked, we need to control the oven spring that occurs. Once entering a super hot oven at 240 degrees the big gas expansion can cause a blowout without a cut. Shallow cuts on the dough prior to oven loading can prevent this. It’s such a beautiful process of baking bread and the science behind it. Still makes me happy inside seeing this everyday #littlethings
