24.01.2022 The power of fermented foods? Low COVID-19 fatality rates in South Korea and Germany may be attributed to kimchi and sauerkraut a recent study has found. : A team of researchers in France, led by Pulmonary Medicine at Montpellier University honorary professor Dr. Jean Bousquet, conducted a study on the dietary preferences of countries with low fatalities from the novel coronavirus.... The study found that countries where diet often includes fermented cabbage had lower reported deaths from the virus. According to the report, fermented cabbage in dishes helps reduce levels of ACE2, an enzyme in the lungs that COVID-19 uses to gain access to the bodies of patients. In South Korea, where the fermented cabbage dish kimchi is a staple food, 296 people have died out of 13,771 COVID-19 infections, a fatality rate of 2.14%. Meanwhile, Germany’s sauerkraut is also seen as a reason for their low death rate of 4.51% (9,163 deaths out of 202,845 cases as of this writing). Coronavirus binds to ACE2 that induces oxidative stress, pro-inflammatory and pro-fibrotic effects. Fermented foods have potent antioxidant activity and can protect against severe Covid-19, Dr Bousquet, the former Chairman of the WHO Global Alliance against Chronic Respiratory Diseases, noted in the report. In addition to high antioxidants and vitamin C, the fermentation process creates probiotics that support the gut microbiome, which helps improve immune response in the body. In April, the New York Post reported a surge in sales of both sauerkraut and kimchi amid the pandemic. New York-Presbyterian and Weill Cornell Medicine Division of Gastroenterology and Hepatology clinical chief Dr. Robert Brown attributed the rise in sales to the perception that these foods will protect against the virus. 17.01.2022 Lupin and pearl barley miso at 6 weeks - still another 6-10 weeks to go before we can use our sweet young miso but starting to taste good already The syrup in front of the Miso is a byproduct that pools at the top of the ferment called tamari and is the very definition of what people mean when they talk about the fifth taste or umami. It is the perfect syrupy balance of umami, sweetness, saltiness and acidity and doesn't last long!! But we've found that as with all cooking the better the produce the better the fermented product and in ferments this can be even more so as the quality of the soil the cabbages are grown in will impact the microbrial profile of the finished product

03.01.2022 An inspiring collection of Prebiotics?? Before you go out and buy expensive prebiotic supplements remember that many foods naturally contain them. That’s because prebiotics are types of fiber found in vegetables, fruits and legumes. Humans are not able to digest these types of fiber, but your good gut bacteria can digest them and love them! And furthermore love to feed on a biodiverse range of these fibres. ... Foods that are high in prebiotic fibre include: legumes, beans and peas, oats, bananas, berries, Jerusalem artichokes, asparagus, dandelion greens, chicory, garlic, leeks and onions to name but a few.
