25.01.2022 Record 153Kg of red sauerkraut put on yesterday ... the 200 litre stainless steel fermenter was full as pussy's bow ... the Ryan Brothers' red cabbage are great - this one weighed in at 5Kg !



24.01.2022 squishing out the carbon dioxide entrained in the sauerkraut at day 5 in the process as it moves from one phase into another .... see the foamy surface as the CO2 is released ... only needs to be done once so the kraut is not floated above the water level and exposed to air and spoilage bacteria .... before (wonderful organic cabbages - not as tightly packed as normally they are but still makes great kraut with the biodynamic Kvass starter) and after pictures below

After buying it from you at Clontarf market about 5-6 weeks ago and the organic cabbage from the guy across the way our first batch of Sauerkraut has fermented into something amazing! It's got great flavor with sourness of a couple weeks ago being replaced by a delicious buttery straw taste over the top. It really is fantastic.
