23.01.2022 Events ... our 2021 events guide is now available. After bouncing through this year, adding to and altering so much of what we do, our little events guide has had an overhaul heading into 2021. This guide is primarily a starting point for planning your event, celebration, dinner meeting, educational night, conference event, wedding, catering or offsite/on location event. The joy of exclusively using the restaurant means that we are able to tailor as much as we can to your e...vent desires. The scope of what [and where] we can do what we do has increased. With the ability to now undertake events for up to 150 people offsite, has created such extraordinary options. Plus with an in-house designer at your disposal we truly can help arrange the entire spectrum of every event from exquisite growers-inspired menu, custom cocktails and curated wine lists through to florals, styling, design and more. 23.01.2022 Too good not to share ... last week the lovely Lizzie @piccolofarm gifted us these magnificent artichokes flowers. As much as I wanted them in the restaurant they quickly made their way to centre stage up at @birch_store. We love these little surprises SO much as did all the visitors to the store over the weekend.

22.01.2022 Our current menu is ending soon ... while this has usually meant that we let the world know so you have a chance to pop in and enjoy your favorite dish one last time, with the weeks ahead booked out there won’t be the chance to do this. BUT, the good news is the menu is changing even further to be a fully driven growers menu. It will change as frequently as each week to ensure we are utilizing what is most seasonal, the highest quality and available in each moment. Yes it’ll be more organization, more prep and more rogue pairings, but with Mother Nature continuously throwing us and the growers curveballs, smaller batch produce being discovered and starting to grow our own we feel this is just the next phase in doing what we do in the restaurant.

21.01.2022 Wagyu ragu gnocchi ... so tasty we had to grab this pic before it was devoured. It’s a hectic week so we enjoyed a little #perk of owning a restaurant and stocked up the fridge this week to ensure we had the sustenance to get us through. Firstly, oh so simple [a quick reheat in the microwave and a 10 min bake in the oven and boom plated and ready to serve]. And secondly, while we had tasted this in the restaurant [usually just a bite full on the fly] it was so divine to sit... and savour our feast. Utter delishness, even the kids scoffed it. It will be back available on the takeaway menu from 13th September. Don’t miss the opportunity to enjoy this one!

20.01.2022 Pre-order takeaway menu is open now ... have you missed takeaway? We have! We didn’t realize just how lovely it was having the takeaway menu at our disposal [#perk or what!] So we are very excited to have this back this week in more ways than you can imagine. ... Orders are open now. Due by 10am Thursday and can be collected between Thursday and Saturday.

19.01.2022 Last chance to order ... takeaway order close 10am Wednesday 16th December [thats tomorrow]. Orders will not be reopening on Sunday, so if you are hoping for feasts, takeaway, sides or ready-to-cook options for Christmas [collect on 23rd or 24th December] your orders are due NOW! Takeaway will closed till January while we enjoy a well-earned [box free break]. ... Orders will reopen 10th January and be available for collection from 14th January.

19.01.2022 Private dinner meetings ... it’s been lovely seeing some of our regular groups join us for meetings and end of year catch-ups. We are currently working on our 2021 guide to events, private dinners, catering and weddings [we thought it would be a quick update, but holy strewth we’ve created so much it’s now become a mammoth overhaul]. We look forward to releasing this over the coming weeks

18.01.2022 Heat in the kitchen ... these gents have powered through the last few months like total demons. After every... ‘Hey let’s open a store’ ‘Hey let’s offer three menus and a birch-made range each week’ ... ‘Hey let’s pack in private events’ ‘Hey let’s squeeze in a shoot’ ‘Hey let’s, hey what about, hey hey hey’ Whatever it’s been, they have been involved in every step of what we have created with incredible dedication [and humour] and there is no way we could have survived and bounced along this year the way we have without them. So from this weekend we’re adding a little buy the chef a beer option to the menu for anyone that wants to show their appreciation for what they do in this crazy little land of Birch [rest assured we will pass on the bevvie at the end of service ] #aceteam #buythechefabeer



18.01.2022 Spring’ish has kind of sprung ... while we have been getting spurts of warmer weather, blossoms are everywhere and the spring winds have made themselves known. We are however in this kind of grey area for produce. Remnants of winter crops are lingering on and spring/summer crops are still a few weeks away from being plentiful. So it’s kinda a no-mans land. In some ways it’s tricky but in others it’s terribly exciting, knowing ALL these things are just ahead of us. ... Prepping the new menu today there were certainly some conversations about these possibilities/alternates/ options/ideas. Looking forward to this season that’s for sure.

16.01.2022 Happy Father’s Day ... we would like to wish all the dads, pops, uncles, grandpas and stepdads the most wonderful day. We are looking forward to celebrating at lunch with our guests [and sending a butt load of feasts off beforehand]. But to the three dads, that are at the core of Birch, a particularly big fat happy Father’s Day to you! ... Spending time away from your own families today to ensure a swag of others get the chance to enjoy a feast is only testament to your commitment and value you instill in all that you do. Your kids are extraordinarily lucky to have you as their dads. You’re each protective, value family time, embrace the funny moments, learn from the tougher ones and those kids clearly have you wrapped around their fingers. You each should be very proud and today we appreciate you doing what you do so many other dads can be celebrated by their families. Thanks gents!

16.01.2022 Opening hours up until Christmas ... here’s a quick update on opening times and ordering options ... Restaurant // Fully booked till 2021 We are keeping a waitlist for all dates we are open and still have 4 seats left for our NYE event. We are managing to get some waitlisters in as bookings adjust. ... Takeaway // will be available as usual Thursday to Saturday right up until Christmas with two additional collection dates added for 23rd and 24th December [note that pre-orders close 9th December and a special festive week pre-order takeaway menu will be released 11th December] Store // open 10-5 Thursday to Saturday then from 17th December open everyday until Christmas. Right let’s get festive ....

15.01.2022 Friday night planning done right ... a swag of people planned their Friday night just right with a good dozen or so boxes of feasts, dinner party packs and all the pies, tarts and desserts heading off this afternoon. With school holidays starting we even had a few families load up to take their feasts with them. Orders reopen Sunday night at 6pm for the long weekend. ... Orders are due strictly by 10am Thursday 1st October and will be available for collection between Thursday and Saturday. Sadly we can not offer home delivery over the long weekend and all orders will be available for collection from the restaurant. The store will be opened for extended trading over the long weekend also ... see @birch_store for details. All we can say is be organised! Based on the levels of hectic we are currently experiencing, were anticipating a car-razy weekend.

15.01.2022 A short break for takeaway ... with the new store opening on 12th September, our regional wine night happening and a couple of private events also happening next week we’ve decided to take a short takeaway break. The menu will be available to order again from 13th September. You all went bonkas for the retro-styled at-home dinner party pack this weekend so it will definitely be back on 13th along with the apple pie, Peking duck pancakes and wagyu ragu with gnocchi. ... We hope all the dads enjoy their Fathers Day feasts, we’ve got chaffed fingers from all of today’s stickering and there’s still tomorrows orders to go. And we can’t wait to celebrate all the dads tomorrow at the restaurant! Whoopfhhh there’s lots on the go [isn’t it fun!]

15.01.2022 Just can’t get enough ... this is one of Chef Ben’s go to dishes. Linguine, chill, eschalot, garlic, white wine and big fat prawns. In the restaurant it’s in a bowl as big as your head and is oh so hearty. And there is a version on the takeaway menu where we do most of the work and you have a three-step process to finish off [so it tastes virtually the same as the restaurant version]. Talk about a versatile little number. We think it might make its debut @birch_store in the coming weeks too? What do you think.

15.01.2022 Last night we held our first regional wine dinner ... you may not have heard about it because, well, we hardly said boo about it and poof it was booked up. It was a way we thought we could safely get back into more dinner service [without stressing takeaway capacity and now store demands], a way to showcase a wine region at a time [especially considering we can’t get to many right now ] and a way for the chefs to deliver a different kind of menu [one that makes the wine sing...]. We had wanted to do this kind of dinner for ages, our aim to bring a selection of wines together so our guests can get a sample of a region in one night. All wines [about 13] were all available by the glass and most by the bottle. And we offered pairings too [that did go rogue in some cases]. All in all, it was delightful! The food was aces like always, the guests totally embraced the concept and settled in for a chat-filled evening, and there were some clear winners in the wines tasted. Pretty certain we will be making this a regular event, now just to find when

So we thought hey let’s do this again but you know with all the peeps! ... Here are the ways in which you can celebrate love over the Valentine’s Day weekend this year at Birch: Thursday 11th February 2021: Join us for our rogue Thursday night dinner. A 3+ course set menu dinner featuring favoured menu dishes [or an excuse for the chefs to go a little rogue]. 08.01.2022 Happy Birthday to us ... three years ago today the doors to little ol’ Birch Restaurant opened its doors. We were wide-eyed, full of anticipation, still dusty from renovating and nervous. We’ve had hurdles, laughs, black-outs, giggles, tears, dreams, juggles and split hollandaise. It has certainly evolved, and none more so than in the last 9 months but it is still the funnest thing we’ve ever undertaken. ... Our crew are an insanely large part of everything we’ve achieved and continue to dream to do. 04.01.2022 You heard right ... Thursday dinners are back! Well every second’ish Thursday that is. Last year we introduced regional wine nights and these were thoroughly enjoyed. So we thought these would be great option to get back into Thursday night dining as we can’t yet operate every Thursday due to private event demand on this night. So these nights will be a 3+ course set menu featuring favorite dishes from current menus, creative test dishes from the chefs or dishes utilizing t...he brilliance from our growers. These nights will also feature wine from one wine region and be offered as pairings or by the glass options. Three dates are open now for booking: Thursday 28th January Thursday 11th February Thursday 25th February We will release dates in batches every few weeks.

04.01.2022 New menu also means pairing homework ... and as the menu will be evolving with growers, seasons and availability the wines sourced have to have a tad more versatility then usual. Our wines are sourced primarily to pair with a dish, not selected for just wines sake. Every wine on our list features as a pairing at some point [aka available by the glass] which gives guests the opportunity to try wines perhaps they wouldn’t normally choose themselves. Wine pairing has become an... integral part of our experience, an aspect where much time and energy is spent curating, tasting and planning. And given the majority of our guests choose to pair, evidently it is an aspect appreciated and enjoyed.

04.01.2022 Regional wine nights ... we’ve been wanting to do these for AGES. So in the spirit of its 2020 anything goes we thought let’s add these into the schedule. So the first dinner was decided and we hardly announced anything about it and BOOM it booked out [we honestly believe people may be stalking our calendar...and we are totally here for those people!] This Thursday we are kicking off the first dinner [wines from Orange, NSW]. The dinners will be a set menu, are 3+ courses ...that you can either choose to pair each course or select from the regionally focused list for the night. We’re pretty sure [like 85%] that these will become a monthly thing. And for those calendar-stalkers we are considering the best ways to give you a chance of getting a table. Stay tuned, once we do the first one we will figure the ins and outs and let you know what and how to make sure you don’t miss out!

03.01.2022 Looks who’s joined us ... more. Many already know Glenn, he pops his head in for service at the restaurant some nights, delivers your takeaway, and is usually wielding a tool undertaking some maintenance project or another. Glenn has been primarily in the background of Birch until recently. Yes he’s co-owner, but he also had a full-time job outside of the Birch bubble. His passion, commitment and how he wholeheartedly invested himself into his career while being a supportiv...e sounding board for us here is nothing short of admirable. So we are extraordinarily thrilled that he has taken the leap and joined the Birch crew on a full-time basis. He will be the main man at the store, you will see him more in the restaurant and there’s some other projects in the pipeline too that he will be orchestrating. 02.01.2022 Needing a takeaway order on the long weekend?... well orders have just opened and all we can say is get in early! Long weekends are manic here in the Highlands. The restaurant is booked out, we’ve extended trading days at @birch_store and we are anticipating takeaway to be in high demand. Orders strictly close at 10am Thursday unless we reach capacity beforehand [we will close orders early if this is the case]. ... We are NOT able to accommodate home delivery over the long weekend [sorry] but collection is available from the restaurant between Thursday and Saturday. So hop to it ... oh it is the LAST weekend that you will be able to enjoy the retro at-home dinner party pack, wagyu ragu toasted gnocchi and Peking duck pancakes [we’re totally devastated too cause these are sooooo tasty].
