19.01.2022 Okay, so about all we achieved this morning was walking River (B&B's wine doggo). But we think that's a pretty good days work on such a hot day, with temps already reaching well into the high 30's. Now, onto the afternoon's 'work'. We hear a chilled glass of sparkling rosé calling... but how to achieve a perfect chill on such a hot day? We'll get to work sharing our chill-tips below... ... 1. Remember to chill your bottle early. 2 hours in the fridge will do the trick (go on, put it in now) 2. Short on time? 20 minutes in the freezer is enough (just) to bring the temperature down. But don't forget it's in there! 3. Entertaining outdoors? Fill a bucket half with ice, half with water. Leave your bottle in there for at least 20 minutes to achieve a cooling down of the liquid. Tip: Remember not to chill a vintage bottle too much as the chill will dull the flavours slightly (though on a day like today, we think chill rules). 18.01.2022 Anyone up for an afternoon Chardy? Yes, Chardonnay is back. We’ve been tasting our way through our new season curated collections, and as we do, we’ll pull out a few of our favourites to highlight for you. The Natural Wine Co. (of Pig in the House fame) is Jason and Rebecca O’Dea’s passion project. This dynamic duo are bringing natural wine making techniques together with certified organic grapes to create organic wines, produced with minimal intervention of course. Th...e kind of wines you can pull out of the cellar (if they make it that far) and enjoy every day. From Cowra in the Central Ranges, the 2019 unoaked Chardonnay is on the lighter side for a Chardonnay enjoying appealing aromas of citrus blossom and stone fruit, crunchy pear and ripe white peach. Soft and fresh, it would pair beautifully with white fish or vegetable risotto. If you’ve got a vegetarian in the house, this is perfect. It's vegan, certified organic and has no added preservatives. 12.01.2022 Spring is a magical time, and it's wonderful to see bees enjoying the garden at this time of year. Yes, yes, but what has this to do with wine I hear you say? With the bees blissing out on the aroma of lavender, we thought it fitting to explore how we can hone our own sense of smell during the Spring months (well, it is wine discovery season you see). Only, at Bird and Barrel, rather than smelling flowers in the garden, we’ll be using our wine to detect floral notes sound ...like fun? In wines, there are three main sources of aroma; 1. The Primary Aroma (grape): fruit, flower and herb 2. The Secondary Bouquet (fermentation/yeast): cream, bread, mushroom, butter 3. The Tertiary Aroma (ageing): vanilla, nuttiness, coffee and tobacco Floral notes reminiscent of Lavender are caused by Cis-Rose Oxide, Linalool, Nerol and Geraniol. Now, here’s the fun bit. Lavender notes can typically be found in red varietals such as Grenache, Shiraz, Mourvèdre, Petit Verdot, Tempranillo and Sangiovese as well as new world Pinot Noir or Granache. We think that sounds like a delicious list of wines to expand your palate. So, whether you’re at home in the highlands or elevated in an urban high rise, there’s no excuse not to stop and smell the flowers this Spring. 04.01.2022 Oh we do love a Pinot Gris... or is it Pinot Grigio? Hang on- what exactly is the difference between a Pinot Gris and Pinot Grigio? Both Gris and Grigio mean 'grey' in their respective languages. The Pinot Gris grape is from the Pinot Noir family and the difference is essentially the style of wine produced from the same grape variety. ... In essence a Pinot Gris is the French style originating in the Alsace region; smooth, rich and fuller in flavour. Pinot Grigio is the easy drinking Italian style; crisp acidic and light. In Australia a Pinot Gris is often fermented in the barrel leading to a more full bodied wine with a higher sugar content (think honey and pear), whereas a Pinot Grigio cold-ferments in stainless steel resulting in a lighter, acidic drop. The most common flavours found across both Pinot Gris and Pinot Grigio are honeysuckle, apple, pear and citrus.
