The cacaos are fermented in 3 tiered boxes for about 4-5 days then patio dried for 12-14 days. 10.01.2022 Have you tried our 80% bar from Peru? Produced in a town called San Martin in the Junín Region, this bar was made by a group of producers otherwise known as CAC Pangoa. This chocolate is so complex and interesting, it almost tastes like Turkish Delight. People generally think of 80% bars as bitter, and rough. We think that has to do with the product you use, and the roast profile. The Pangoa 80% is an example of how higher % bars can be fruity and fun! ...
