03.01.2022 Food is woven into the fabric of Italian culture. It’s not only the act of eating together, it’s also very much about preparing food together. My fondest memories as a child are of family and friends gathering to celebrate birthdays, festive days, sacraments and even loved ones leaving for or returning from the mother country. Indeed, often there was no reason. There was such a strong sense of togetherness among my parents’ generation. Everybody happily congregated to get th...e job done. Annual food rituals such as tomato passata, salami and wine seasons (I clearly remember standing in a vat crushing the grapes with my little feet) were wonderful times. The adults worked like well oiled machines and the children played. At the end of each day we ate. I do miss the togetherness and tradition. This nostalgia is why I began Biscotto...to restore that dwindling concept of ritual, of taking time and love to create delicious food that many can enjoy. It started with the Cannoli...a traditional, joyous symbol of celebration for me. When my little family moved to Noosa four years ago and my search for Cannoli came up empty handed, I decided to make my own. And so the journey began. It took a long time tweaking my recipe and technique and goodness knows, many an ordinary, blisterless, cannoli shell never saw the light of day. I tried commercial shells...but I’m fussy...very fussy. So I persisted and eventually created a cannoli that I think is one of the best I’ve ever had...and I’ve had a few. Even though these days I don’t have a village to help me make them (although I have some very keen little taste testers), I simply adore that I can share them with my new Sunshine Coast community. My customers are not only taking home a box of shells and cream, they are bringing home the experience of preparing something fun and utterly delicious with their loved ones.
