25.01.2022 For our last hurrah before family holidays next week: dry-aged heritage beef... Today and tomorrow we have 5-week-aged rib eye and sirloin from the amazing Hereford/Angus beef from Glenburnie, Victoria. We are doing Tuscan style for the rib eye (a bit south of the French border, but sooo good!) and Bordelaise for the sirloin.
