17.01.2022 "The special of the week" - Hare a la Royale which was created in 1775 for the King Louis XVI. Deboned hare slow cooked for 10hours served with 3 purées of carrot, celeriac and potato. Finished off with a red wine and armagnac sauce. Like many great classic recipes, this preparation requires three days to complete. This dish is full of flavour and could only be described as gamey.
