05.01.2022 Which meats are processed? Any meat which has been preserved in some way (curing, salting, smoking, drying, canning) is classed as processed. They include sausages, hot dogs, salami, ham, bacon, corned beef, deli meats, smoked meat, beef jerky and canned meat.... Why cut back? Many studies have found a link between processed meat consumption and an increased risk of cardiovascular disease, certain cancers and type 2 diabetes. Intake of lean red meat still appears to be controversial, but recent evidence suggests a reduction to less than 350g per week is beneficial. All research has shown fish intake to be beneficial for heart health, as well as increasing our intake of plant-based proteins (beans, lentils, tofu) and plant foods (vegetables, fruit and wholegrains). So instead of snags and veg, why not try salmon. And perhaps swap your bacon and eggs for baked beans and eggs! I used capsicum, eggplant and red onion - add a packet of microwave brown rice and a tin of lentils... - add some fresh rocket, dried cranberries and feta - I used a balsamic dressing but you could also use others Of course this would also work well as a side to a piece of meat, chicken or fish but is quite satisfying on its own. It’s such a versatile recipe as there’s so many different versions that can work. Pumpkin, Zucchini, broccoli, cherry tomatoes would be great, and halloumi is a nice alternative to the feta. 01.01.2022 PICKY EATERS I’m a big fan of only cooking one meal for all the family. Tonight was Moroccan chicken and rice. For Mr 4yo I added a small corn tortilla which I air-fried to make chips for scooping his meal. ... His initial reaction before tasting it was yuck. I offered a dob of Greek yoghurt on top and this sealed the deal to have a taste. It was soon followed by a thumbs up and he ate the meal. If you’re having trouble with a picky eater, instead of cooking something separate, think about what you could add or how you could present it to make it more appealing! Eg. Add cheese to veg, a dip on the side, add a sauce or yoghurt, try pasta shapes, add a crumb or cut meat into cubes or strips.
