24.01.2022 Suns out, guns out. A day like this calls for Poor Toms Piña Colada Gin. Boasting a huge lineup of tropical botanicals including pineapple, coconut and pandan followed by a whack of juniper. Sip it with a Deeds Brewing Pavlova Sour Hazy Pastry DIPA or chuck it into a G&T - good times guaranteed. Back at it again from 12pm.

23.01.2022 NEW BEER KLAXON We just received a couple stouts from our friends at Mikkeller HQ 'Beer Geek Waffle Breakfast', a doozy of a beer, brewed with lashings of coffee, cinnamon and maple syrup.... 'Beer Geek Maple Vanilla Shake', a big boozy boi made with coffee, vanilla and maple syrup and a copious amount of oats for good measure. Bar open til 10pm. Takeway available until 9pm.
23.01.2022 Dormilona and Feral Brewing Company have joined forces to create FERAL BONES. Pushing the boundaries of beer and wine, Hazy Verdelho is the first ever co-ferment from this dynamic duo. Were stoked to have the ONLY KEG that has made it outside of WA. On tap from midday until its gone. There are also a handful of exclusive bottles available for takeaway.... Pop in around 5pm and you can grab a few splashes of the Dormilona Yokel range, including the very same wine used in the co-ferment. Bar open until 2am.
23.01.2022 Its officially zesty boi season and the team Forest For The Trees have absolutely nailed it with this refreshing beverage. Bursting with aromas of complex spices, lemon peel and a subtle acidity to keep it fresh. Its a #dayforit.
22.01.2022 The current and ongoing COVID-19 pandemic has been a time of reflection for everyone, including us here at Bitter Phew. In this time of "pause" we have had time to think over our social responsibility as a place of community gathering and business in the fight to create an ecologically sustainable planet for our future generations of beer lovers. We have always had a commitment to principles of sustainability here at BP. Whether that be eco-friendly cleaning chemicals, recycl...ed consumables, complete recycling of all bottles and cans and thus the minimisation of the amount of waste that goes to landfill. We also LOVE local beer and wine which constantly grace our beloved menu behind the bar. But we have been asking ourselves... how can we take this further? Over the next 6 months we will be taking it upon ourselves to actively assess and further reduce our carbon emissions and waste. We will be taking on a much bigger commitment to showcasing products and producers that are championing sustainability, organics and looking clearly towards a better, cleaner future. This wont be an immediate process, however we are looking forward to sharing this journey with you all. We also want to make this a starting point in which there is open discussion between people, local businesses and ourselves, instigating collaborative efforts to help us along this journey. To launch our sustainability program, the month of September will be a showcase of local producers who truly champion these values, alongside collaborative efforts with likeminded people and businesses.

20.01.2022 We took a deep dive into our cellar and found this beauty. Making its way to our #rarephew this weekend is a huge collab between Mikkeller HQ and Brouwerij Boon. A blend of the driest of dry lambics, this Oude Geuze has been waiting patiently since 2015 for its time to shine. Today’s the day. Only one bottle available. Won’t last long. 16.01.2022 Off-grid brewery Rocky Ridge Brewing Co are making huge waves in sustainability. Established in 2017 with an ultimate goal of self-sufficiency, these WA brewing renegades have a clear vision for a brighter future. Using organically farmed produce, including local malt and hops from their own property, reusing waste such as spent grain to feed their cows and a totally self-sufficient water treatment system, their core values resonate strongly with our sustainability program.... Our beer of the week is their Imperial Ace. Triple dry-hopped with copious amounts of Chinook, Ella and Citra, this 8% imperial pale is bursting with passionfruit, melon and guava. In the fridge now. This week sees Ailsa Bay Sweet Smoke Single Malt paired with Forest For The Trees Saison. Creamy toffee, candied orange peel, stone fruit and dried peat matched with the sweet spice and zest from the Belgian-inspired farmhouse ale. A feast of delights. Get yours from 3pm today.... 13.01.2022 Tuesdays are back! To celebrate the build-up to our birthday bonanza this weekend, we tapped The Bruery 'So Happens Its Tuesday' 2019. Aged in Bourbon barrels, this beer is full of toasted coconut, chocolate and hazelnut notes. It also clocks in at an impressive 15 % ABV. ... Taps flowing from 3pm til late.
13.01.2022 It’s always a good day when Sally Rainbows visits. Sabrina is an off-white Chardonnay from Canowindra which sees a little skin contact to turn up the texture. Funky, fresh and intriguing. Roland is a light, crazy drinkable Mourvèdre with wonderful acidity built to quaff with vigour. Like an orange wine but red says Sal. Yumbo.... Available by the bottle to drink here in the beer garden or take home with you for the weekend.

12.01.2022 We are stoked to announce that this mad brew from Two Birds Brewing has landed in our fridges. The Lemon Meringues oat cream IPA has all the tart, zesty notes you'd expect and a nitro creaminess to top it all of. Come grab one before we drink them all.
12.01.2022 Day for it. Making its way to our #rarephew this weekend is Deschutes Brewery The Abyss Rye 2015 Vintage. This barrel-aged imperial stout is brewed with blackstrap molasses, liquorice, cherry bark and vanilla beans. It then rests in rye whiskey barrels for a year before bottling. Huge. After five years in the cellar, we reckon it’s time to dig in. Only one bottle available. Probably won’t be here very long.

This is Ngarto Field Blend 2019. A collaborative effort between Ngeringa and Carto, this juicy number is a true field blend - a mix of underripe Aglianico and overripe Tempranillo with a super light maceration. Topped with Pinot Noir and Syrah in barrel, making use of grapes that otherwise would have gone to waste. Certified biodynamic. Available by the glass right now. 09.01.2022 Peter Bignell built and operates the worlds only biodiesel powered still. Thats just one of the many seriously impressive feats of Belgrove Distillery - a true champion of sustainability. The distillery is almost entirely run on biofuel made from waste fryer oil collected from local fish and chip shops. All distillery water is captured on the farm without government infrastructure. Spent mash is fed to the livestock. The list goes on and its clear to us that Peter may just... have the greenest distillery on the planet. Sustainability is much more than organic produce and recycling. It is recognising one’s duty to those around them and the importance of giving back. We look to make a conscious effort, taking leadership in providing charity and support to those around us and the greater community. Join us for our next Sustainability ...Sunday on November 1st from 1pm ‘til late. Taking inspiration from the ‘Pay the Rent’ movement, we’ll be raising funds for Aboriginal Legal Service to support the self-determination of Indigenous Australians whilst contributing to the process of Reconciliation. Bitter Phew acknowledges responsibility and looks to promote understanding, mutual respect and good will. We’ll have a Karma Keg courtesy of Fixation Brewing Co through which 100% of sales will be donated to the cause. 06.01.2022 Wildflower Beer is a local producer leading the charge in sustainability and organics. This is the first batch of their Organic Table Beer. Working with Voyager Craft Malt and Organically Greenwood, this 2.9% brew uses certified organic barley, malted wheat and hops. The principles of the farm go well beyond not using herbicides or pesticides - they utilise regenerative farming to improve the life in their soil and their produce. Were super proud to work with the Wildflower team. Maybe even more excited to drink a few of these in the afternoon sun.
05.01.2022 Nestled on 165 acres in the Texas Hill Country, Jester King Brewery is dedicated to sustainability and regenerative farming. Not only the first brewery to become certified organic in Texas, Jester King also operate one of the largest solar power systems in the area. Alongside native grasses for water retention and holistic grazing for natural fertilisation, the Austin brewery strives to exist in symbiosis with the land. Mismatch Brewing Company Negroni IPA takes a clean malt base, a bunch of Amarillo hops and bitters courtesy of Adelaide Hills Distillery blended post fermentation. 04.01.2022 Waratah is back. Wildflower Brewing & Blending Waratah 2019 is made entirely from ingredients grown and foraged in NSW. Wholly native yeasts foraged off hop flowers, grain from Voyager Craft Malt and hops from Ryefield Hops. A truly agrarian beer with thought and purpose. Marzipan and savoury oak on the nose, followed by toasted sourdough and orange marmalade. Lots to think about and even more to enjoy....
