15.01.2022 I thought I would share the recipe I used for my lunch last week... Super easy Chicken and Sweetcorn Soup (even the kids like it ) I made a big batch that lasted most of the week. Also don't forget we sell a large range of Fresh Chicken products... Check them all out on our website... www.bkqualityfoods.com... CHICKEN AND SWEETCORN SOUP Ingredients.. 100 grams chicken breast, chopped finely 1 teaspoon cornflour 2 teaspoon soy sauce 2 tablespoon oil 2 cups chicken stock 1 can creamed corn pepper 1 egg soy sauce to taste spring onion to garnish 1 teaspoon cornflour 2 teaspoon cold water to thicken Method... In a bowl mix together chicken breast, cornflour and soy sauce. Ina saucepan heat oil and add the chicken mix, fry chicken until cooked. Add chicken stock, creamed corn and pepper and simmer for 5 to 10 minutes. Make a paste with cornflour and cold water. Thicken soup. Mix in egg Then season with soy sauce to your taste. Stir though spring onions. I doubled this recipe... Enjoy!! Yum

13.01.2022 I love sharing with you all some of the easy and tasty recipes I cook for my family at home... Here's another one. This time the main ingredient is Chicken Mince, which is a product we have only recently added to our online store. The best thing about this easy recipe is the kids love it!!! INGREDIENTS 1/2 cup (120ml) Oyster Sauce 4 tablespoons Light Soy Sauce 4 tablespoons Water 1 packet Rice Noodles 4 tablespoons olive oil, divided 600g BK Quality Foods Chicken Mince 150g Mushrooms, thinly sliced 2 carrot, peeled, cut into thin matchstick-size strips (about 200g) 1 small brown onion, thinly sliced 2 garlic cloves, crushed 1 spring onion, thinly sliced METHOD Step 1 In a small bowl, whisk the oyster sauce, soy sauce and 4 tablespoons water together. Step 2 In a large pot of salted boiling water, cook the noodles for 4 mins or until al dente. Rinse the noodles under cold water. Drain. Step 3 Heat 2 tablespoon of the oil in a wok or large heavy frying pan over medium-high heat. Add the chicken and cook, without stirring, for 2 mins or until the chicken is well browned on the bottom. Continue cooking, breaking up the chicken into small clusters, for 2-3 mins or until just cooked through. Step 4 Transfer the chicken to a heatproof bowl and set aside. Step 5 In the wok over high heat, heat the remaining 2 tablespoon oil. When the oil is smoking, add the mushrooms, carrot, onion and garlic. Stir-fry for 3 mins or until the mushrooms are tender. Stir in the cooked chicken and then the sauce mixture. Add the noodles and toss until well combined and heated through. Step 6 Divide the noodle mixture among 4 serving bowls. Garnish with spring onion and serve immediately. Yummy!!!

05.01.2022 Since I'm in the Atlantic Salmon mood I thought I would share a yummy recipe for you to try at home.... INGREDIENTS 4 BK Quality Foods Atlantic Salmon portions 1/3 cup plain breadcrumbs... 1/3 cup grated parmesan cheese 2 tablespoons finely chopped parsley 2 cloves garlic , minced 2 tablespoons melted butter Salt and pepper Lemon wedges , to serve INSTRUCTIONS 1...Position a rack in the middle of the oven. Preheat oven to 200C. Line a baking tray / sheet with a large piece of foil. Place the salmon portions, skin side down, on the baking sheet; set aside. 2...Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with 3/4 teaspoon salt and 1/3 teaspoon pepper (or to taste). Mix until the breadcrumbs absorb the butter. 3...Put the mixture on the salmon, press onto the top until the salmon portions are completely covered. Lightly spray the salmon with cooking oil spray for a golden crumb. 4...Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork. 5...Serve with a wedge of lemon, salad, steamed vegetables, rice or mashed potatoes.
