To a small saucepan add: 1 cup oats 2 cups milk of choice 1 tblsp chia 1/4 cup shredded coconut Stir frequently over low heat until combined. If you like your oats extra creamy like me, then continue to gradually add up to 1 cup more milk & stir Keep stirring oats until thick and creamy. When cooked, spoon oats into a bowl and stir through a scoop of vanilla protein powder (optional). Top with banana slices a large scoop of PB a drizzle of honey and a sprinkle of shredded coconut Serves 3 I like to prep a large batch and keep the leftovers for breakfast through the week. Just add a dash more milk and then microwave to reheat. Stir through a dash more milk if needed Enjoy! It just wouldn't be Christmas without all the festive baking and treats you can possibly make You guys voted for me to share the recipe for these deliciously festive cookies so I hope you enjoy them as much as we did on Christmas day . . RED VELVET PROTEIN CRACKLE COOKIES 1 cup Almond Meal 3 tblsp Coconut Flour 2 scoops Vanilla WPI Protein (I use @blackbelt_protein NZ Natural Whey - discount in bio) 1/4 cup cacao powder 1 tsp Baking Powder 1 tblsp beetroot powder or a few drops red food colouring 1 tsp Vanilla Essence 5 tblsp Sugarfree Maple Syrup 4 tsp Coconut Oil or butter . Preheat the oven to 180 and line a baking tray In a large mixing bowl, combine all dry cookie ingredients. Add wet ingredients, making sure to slowly add the coconut oil until the dough comes together. Depending on your protein powder, you may need more or less liquid to form a firm dough Refrigerate dough for half an hour until chilled, as this is what will create the crackles when baked. Divide mixture into 12 even balls. Flatten slightly and evenly space on baking tray Place in oven and bake for 10-15 minutes or until just slightly golden on edges Place on a wire rack and dust with snow aka icing sugar or @natvialiving Baking sweetner.
