24.01.2022 Some pictures from our recent garden tour to the Mornington Peninsula, including visits to Dame Elisabeth Murdoch's Cruden Farm, Cranbourne Botanical Gardens and Eckersley Garden Architecture's Musk Cottage. A wonderful time was had by all, including fitting in some cheeky wine and cheese tasting!

18.01.2022 Having no garden of my own, I tried my hand at foraging - using wild edibles often considered weeds in the kitchen. I chanced upon some nettles during a recent visit to the country and after a bit of research made them into a soup. They're a hassle to pick (use rubber gloves or a plastic bag) but when boiled they loose their sting and make a delicious and vitamin-rich soup.

16.01.2022 A delicious way to make use of the the best produce in season at the moment - Pumpkin Pie! 450g peeled butternut pumpkin, cut into 2cm pieces 1 tablespoon honey 1 tablespoon golden syrup... 1/3 firmly packed cup (80g) brown sugar 1 teaspoon ground cinnamon, plus extra to serve 1/2 teaspoon each ground nutmeg, ground cloves, ground ginger and allspice 400ml thickened cream, plus extra whipped cream to serve 3 eggs, plus 1 extra yolk For the pastry I just cheated and used some frozen short cut pastry, but I think a nice biscuity based pastry would work excellently! Arrange pumpkin in a single layer on the baking tray. Drizzle with honey, then cover with foil. Roast for 30-40 minutes until tender. Place in a colander and allow to drain for 15 minutes to remove excess water. Transfer to a cleaned food processor and whiz until smooth. Set pumpkin puree aside to cool completely. Grease a fluted 23cm x 3cm round loose-bottomed tart pan. Roll out the pastry on a lightly floured surface to 5mm thick. Line the tart pan with the pastry, trimming the excess, then chill for a further 30 minutes. Reduce oven to 180C. Line the pastry case with baking paper and fill with baking weights or uncooked rice. Bake for 20 minutes, then remove the paper and weights and bake for a further 3 minutes until golden and dry. Place golden syrup, sugar, spices and cream in a saucepan over medium heat and bring to just below boiling point. Remove from heat. Beat eggs and extra yolk together, then add the cream mixture, whisking gently to just combine. Whisk in the pumpkin puree. Pour into the tart case and bake for 30 minutes or until set but with a slight wobble. Cool, then top with whipped cream, dust with cinnamon and serve. Enjoy!!

14.01.2022 Zucchini and Apple Cake* A great way to use up a glut of zucchinis if you have them...or to disguise vegetables for the little ones Ingredients and Method:... In a bowl, combine 1 cup of flour, 100g caster sugar, 1 tsp cinnamon, 1/2 teaspoon each of baking power and bicarb soda, 125g grated zucchini, 125g grated apple, 150g raisins, and 1/2 cup of walnuts and make a well in the centre. In a second bowl, add 2 eggs, 1 tsp vanilla and 1/2 cup of olive oil, mix thoroughly and add to the bowl of dry ingredients, folding through. Pour into a greased and lined loaf tin and bake for approximately 20 - 30 mins at 180 degrees. *Recipe adapted from Valli Little - ABC Delicious
