11.01.2022 ok had time to think! confit chicken, russian salad(fancy potato salad) & vino cotto(sweet & sour reduced grape must) alternate lamb garnish....hevens forbid....warm eggplant salad(like a capponatta finished with rasins, pine nuts and fresh herbs) dressed in red wine vinegar to help balance the sheeps milk fetta!

03.01.2022 just a quick one... picked up sone nice yellow fin tuna at the markets today thinking about cooking it confit(in olive oil) and putting a rosemarry black pepper and honey crust on it! that will be rolled and set probly by friday! and will sell for around $14. post tonights specials soon!
