16.01.2022 A comfort food curry in 25 minutes? You'll be fed and toasty in no time with this vegan tempeh number. Ingredients 1 tbs vegetable oil ... 200g tempeh, cut into 2cm pieces 1 brown onion, finely chopped 2 celery sticks, finely chopped 2 carrots, peeled, finely chopped 2 garlic cloves, crushed 120g (1 2 cup) yellow curry paste (see tip) 2 x 420g cans chickpeas, rinsed, drained 500ml (2 cups) So Good Cashew Unsweetened milk 400ml can coconut cream 6 silverbeet leaves, stalk trimmed, leaves shredded Steamed brown rice, to serve 1 long fresh red chilli, chopped 80g (1 2 cup) roasted cashews, chopped 1 tbs nigella seeds (optional) Fresh basil leaves, to serve Pappadums, to serve Method Step 1 Heat oil in a large saucepan over mediumhigh heat. Cook tempeh, turning occasionally, for 3 minutes or until browned. Transfer to a plate lined with paper towel to drain. Step 2 Add onion, celery, carrot and garlic. Stir often for 3 minutes or until softened slightly. Stir in paste until aromatic then chickpeas. Step 3 Pour milk and coconut cream into pan. Bring to the boil. Reduce heat to medium. Simmer for 3 minutes or until sauce thickens slightly. Stir in silverbeet. Cook for 2 minutes or until just wilted. Remove from heat and season. Step 4 Divide rice and curry among serving plates. Top with tempeh, chilli, cashew, nigella seeds, if using, and basil. Alcohol itself is harmful, and after training it is generally a destructive force, for your heart, and also on the whole organism! 07.01.2022 Looking for a healthy-ish dessert that is still incredibly delicious? Look no further, this yoghurt and strawberry tart with mint sugar tastes as good as it looks. And it's made with a homemade nut-based pastry tart shell. Ingredients 1 1/2 cups (240g) almonds ... 2 tbs chia seeds 6 fresh dates, pitted 1 tbs vegetable oil 1 egg 2 tsp vanilla bean paste 1/2 cup mint leaves 1/4 cup (55g) white sugar 3/4 cup (200g) Greek-style yoghurt 1 1/4 cups (300g) reduced-fat ricotta 250g strawberries, thinly sliced Method Step 1 Grease an 11cm x 34cm (base measurement) fluted tart tin with removable base. Place almonds, chia seeds, dates, oil, egg and half the vanilla in a food processor. Process for 3 mins or until finely chopped and the mixture holds together when pinched. Spoon into the prepared tin. Use a flat-bottomed glass to spread and press the mixture evenly over the base and sides of the tin. Place in the fridge for 15 mins to set. Step 2 Preheat oven to 180C. Place tin on a baking tray. Use a fork to prick base all over. Bake for 15 mins or until firm. Cool. Step 3 Meanwhile, place mint on a small microwave-safe plate lined with paper towel. Cook in the microwave on high for 30 secs, in 3 intervals, or until dry. Place mint in a clean food processor with sugar. Process until finely chopped. Step 4 Place yoghurt, ricotta and remaining vanilla in a clean food processor and process until smooth. Spoon over the almond mixture in the tin and smooth the surface. Chill for 20 mins or until firm. Step 5 Transfer tart to a serving platter. Top with strawberry. Sprinkle with mint sugar. 06.01.2022 You won't even notice this easy salmon pasta bake is low-cal because it's packed with so much flavour. Ingredients 300g wholemeal penne pasta ... 500g cauliflower, cut into florets 1 tablespoon olive oil 1 brown onion, finely chopped 2 large garlic cloves, crushed 2 x 400g cans cherry tomatoes 2 teaspoons balsamic vinegar 415g can red salmon, drained, flaked 60g baby spinach 100g fresh ricotta, crumbled 30g finely shredded parmesan Small fresh basil leaves, to serve Method Step 1 Preheat the oven to 200C/180C fan forced. Cook the penne in a large saucepan of boiling water for 7 minutes, adding the cauliflower for the last 3 minutes of cooking. Drain well. Step 2 Meanwhile, heat the oil in a large, deep frying pan over medium heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the garlic and cook, stirring, for 30 seconds. Add the tomato and balsamic vinegar. Season. Step 3 Combine the tomato mixture, pasta, cauliflower, salmon and spinach in a 3L (12 cup) baking dish. Dot with ricotta and sprinkle with parmesan. Bake for 15 minutes or until the cheese is melted. Sprinkle with basil leaves.
