Coeliac Disease - its not a food allergy or intolerance, its an autoimmune disease! Gluten for Coeliacs eating gluten damages the lining of the small intestine, which decreases the absorption of nutrients and leads to further problems like osteoporosis, nerve damage, infertility. (Even small amounts!) Symptoms as bloating, diarrhea, constipation, abdominal pain, headaches, skin problems. 2. Gut Inflammation- The proteins in wheat can be irritants (like papercut digging into the gut causing inflammation). Few people are more sensitive them others, however as much as we can avoid inflammation is better for our immune system in general plus we can avoid any development of other diseases. Balance the amount of gluten daily is a good way to prevent it.
