16.01.2022 This is one of my favourite recipes, particularly when it is really hot. Vietnamese rice paper rolls are delicious and can easily be made to suit vegetarians/vegans, those who are gluten free, dairy free or have another allergy/intolerance. This recipe is enough for 12 rice paper rolls. INGREDIENTS - 12 sheets of 22cm round rice paper... - A protein of your choice (tofu, chicken/beef/turkey/pork mince, cooked eggs) - 1 chilli, sliced finely - 3 cloves of garlic, minced - 2 tbsp soy sauce - 50g vermicelli noodles, cooked as per the packet directions - 6 lettuce leaves, sliced finely - 1 cup bean sprouts - 1-2 carrots, grated - Mint and coriander leaves RECIPE: 1. In a fry pan, add oil and the protein, garlic, chilli and soy sauce. Stir over the heat, until the protein is completely cooked and then set aside. 2. Boil water, and place in a wide, shallow container. 3. Soak one sheet of rice paper in the boiling water until soft. Transfer onto a plate and begin to assemble the rice paper roll. 4. Place small amounts of the protein, herbs, sprouts, carrot, lettuce and noodles in the middle of the rice paper sheet. 5. Roll the rice paper sheet, as described on the packet. Repeat steps 3-5 until you have made 12 rice paper rolls. Serve the rice paper rolls with your favourite sauces, a peanut or chilli sauce works well.
