18.01.2022 I wish to inspire you.... Yesterday I baked a sourdough rice bread. Its 20 years about since I last used that baking tin to bake in. What did I learn? 160 degrees for 75 minutes was about right in my oven. I could add another cup and a half into my flour mix to make a bigger loaf. (rice breads don't rise like wheat so if one needs a bigger sanger cut the bread longways - this makes 4 slices = two sangers. I enjoyed the flavor. (I used idli mix 2/3 rice and 1/3 mung dall to make a complete protein this time, but usually I use 100% coarse rice flour). The starter source was about 30ml of Mangalli Ck kefir mixed two days before to get a good ferment up. So if you are gluten free and looking for a challenge, bake your own sourdough...
