16.01.2022 Calamansi This south-east Asian citrus fruit is native to the Philipines. We received a small quantity from our chinese neighbours tree. Boy does this fruit pack a punch of super sour-bitter and a massive bouquet. We poached them and created a Calamansi paste which has been folded into our pure milk base gelato. The idea was to preserve the natural characteristics whilst slightly toning it down.... Super LIMITED EDITION.
