25.01.2022 On a hot day like today, dinner had to be refreshing, and fast. This super quick salad contains 4 serves of vegies and 1 serve of protein. The mushrooms I used were from a bulk lot (500g) sauteed (with garlic, oregano & thyme and a couple of teaspoons of olive oil) a couple of days ago which I refrigerated to use in salads and sandwiches through the week while I'm busy. You can just use raw mushrooms if you like them and add oregano & thyme or mixed herbs for a bit of extra... flavour. Fair warning, I am not the best photographer. Quick sweet chilli tuna & mushroom salad Serves: 1 Ingredients 1 small tin Aldi Fishmonger Sweet Chilli Tuna 1/2c mushrooms - raw or previously sauteed with garlic and oregano &/or thyme in non-stick pan and refrigerated 1/2c red capsicum 1/2c bean shoots 1/2c mung bean sprouts Method Place ingredients in bowl, making sure to empty sweet chilli sauce from tuna tin (aka the dressing). Mix well and serve Nutrition Energy: 950kJ Protein: 21g Fat: 5g Carbohydrate: 27g Fibre: 12g

23.01.2022 Taking vitamin D supplements but love mushrooms? Maybe you could skip a day or two each week and get your vitamin D from food instead. Did you know that you can put 5 button mushrooms or just 1 Portobello mushroom in the sun, and they will produce 24 g of vitamin D, which translates to nearly 1000 international units (equivalent to 1 capsule/tablet), providing the amount you need each day? Cooking your mushrooms does lead to losses, but the research tells us 60-80% of the... vit D is retained, so to get your recommended daily intake, simply double the amount to 2 Portobello or 10 button mushrooms. Don't forget that you will need a little bit of olive oil with your mushrooms as Vitamin D is fat-soluble. My favourite way to have mushrooms is sauteed with garlic, oregano, thyme, lemon juice and a little bit of olive oil. It's quick, easy and super tasty. Proving yet again why I don't need to worry about how much FB knows about me, because they should know that I've been warning people about dodgy snake oil sales like this for years now. There is one more definitive step you need in order to take to receive an accurate diagnosis: a small bowel biopsy. 19.01.2022 When you spend all day talking about food and have been cooking for a small army for over 20 years, dinner can often feel like a chore. Especially when you're time poor and tired. Part of my role as a nutritionist is to be aware of new or alternative food products. There is no better way to do that for my vegetarian and vegan clients than to try them myself. Even if you're not vegetarian or vegan, if you feel like a treat of some delicious ravioli, you will love this Coles-...exclusive Nature's Kitchen plant-based version. I honestly could not tell the difference, because manufacturers don't actually put very much beef in it anyway (~15%). It's all about the herbs & spices. So if you're struggling with ideas for meat-free Mondays, or just want a change from pumpkin, spinach or mushroom fillings, this is definitely worth trying. You can make it with a super healthy tomato-based sauce to complement some lovely Mediterranean vegies, or with a creamy garlic sauce with Marsala wine (or suitable substitute) with broccoli, cauliflower, carrots, and peas. However, teachers find it challenging to implement such programs due to overcrowded curricula. Integrating nutrition with core subjects such as mathematics could potentially address time constraints and improve the learning of both. ... The primary aim of this randomized controlled trial (RCT) is to evaluate the impact of a cross-curricular nutrition and mathematics program on primary school students’ portion size estimation skills. According to Diabetes Australia: "Diabetes is the fastest growing chronic condition in Australia; increasing at a faster rate than other chronic diseases such as heart disease and cancer. In Australia, one person develops diabetes every 5 minutes.... Around 1.7 million Australians have diabetes. This includes all types of diagnosed diabetes (1.2 million known and registered) as well as silent, undiagnosed type 2 diabetes (up to 500,000 estimated) More than 100,000 Australians have developed diabetes in the past year For every person diagnosed with diabetes there is usually a family member or carer who also ‘lives with diabetes’ every day in a support role. This means that an estimated 2.4 million Australians are affected by diabetes every day Total annual cost impact of diabetes in Australia estimated at $14.6 billion Complications include blindness, amputations, heart and kidney disease" Incredibly, I still come across people with diabetes who have never been referred to a dietitian. As a result, many end up on insulin. Early diagnosis nutrition education is crucial for better long term quality of life. If you know someone with diabetes that this may apply to, let them know they can see a dietitian for free with a referral from their GP, all they have to do is ask. 13.01.2022 For those that think nutrition science is constantly 'changing it's mind'. Yes we are, and this is a good thing. Science is about evidence. When presented with new evidence (if we are lucky enough to find funding for our studies), we adjust our advice accordingly. However it doesn't just take one or two studies, it takes a body of evidence and this takes time. Why? Studies need to be able to be replicated. This is why cherry-picking one or two studies to suit an ideology... simply doesn't cut it. Who wouldn't want that sort of rigour?

12.01.2022 It is Food Safety Week, and the NSW Food Safety Authority would like to build upon the new sanitation behaviours established during COVID-19 to help reduce foodborne illness. We can do that by following these 5 simple food safety tips: CLEAN wash hands with soap and running water before handling food and between handling raw foods and ready to eat foods, wash up regularly, especially items which have been used for raw meat and poultry, and keep the kitchen surfaces & fridge... clean. CHILL keep the fridge at 5C or below, refrigerate any leftovers as soon as they’ve stopped steaming and use within 2-3 days (or within one day for people at higher risk of foodborne illness including pregnant women, the elderly, and those with compromised immune systems) or freeze them immediately. COOK use a thermometer and cook poultry, sausages, minced or stuffed meat dishes to 75C in the centre; be aware of the risk of raw or minimally cooked egg dishes or look for the new pasteurised eggs. Follow any cooking instructions on the food packaging. Remember, microwave ovens can cook unevenly. Make sure you follow the recommended stirring and standing times before serving. SEPARATE prevent cross contamination, especially between raw meat, seafood, fish or poultry and ready to eat foods like cooked meats, desserts and salads. "According to the Australian Bureau of Agricultural and Resource Economics the average Australian consumes 27.9kg of pork per year, more than double the 11.7kg in 1975. In addition, Aussies eat around 27.9kg of beef per person, per year." That's over 1kg of meat per week per person, or double the recommended amount for good health.

11.01.2022 Today I had to cook the first of 3 dishes for a Food Service Dietetics assessment for my post-grad. Each has to address a different therapeutic diet, considering allergies, intolerances, texture, nutrients of concern etc, and be suitable for use in a health setting. Best assessment ever, where I got to eat the results, and it was delish! The first diet I have been assigned is gluten-free for Coeliac Disease (CD). So this is what my daughter and I had for lunch, and my husb...and and other daughter (who is currently being tested for CD) are having as part of their dinner. Tuna and bean salad Serves: 4 Ingredients c diced red capsicum (70g) 1 chopped spring onion (20g) 50mls aquafaba from 4 bean mix 1c drained 4 bean mix (170g) 230g drained tuna chunks in spring water or brine Dressing: c lemon juice c extra virgin olive oil tbsp oregano (1g) Pinch of pepper Method: 1. Combine dressing ingredients in a container with a lid, shake well and set aside. 2. Drain 4 bean mix, retaining 50mls of the liquid (aquafaba. 3. Combine all ingredients well and divide into 4 lots of ~1c of mixture each. 4. Place dressing into a small dressing container beside each bowl and serve chilled.* * communal dressing dispensers are used in our house, but this recipe was created for a hospital setting Ingredients were sourced from Aldi, so that they would be quite similar in cost to wholesale food suppliers. I worked the cost out to be just over $1.53 per serve. The serving size is suitable as a main, it is quite filling. In a couple of weeks it will be time to come up with a dish for diverticulitis patients, so stay tuned for the next instalment.

Not all nutritionists are nutrition scientists (like myself) or dietitians (who are also nutrition scientists, but additionally qualified to work in our health system). In Australia unfortunately you do not have to go to university and do a science/med degree to call yourself a nutritionist. You can in theory have no formal qualifications, or do a 6-week online certificate program, or one of any number of alternative therapies courses. You won't know unless you ask, how a nutritionist attained their qualifications, so that you can make an informed decision about the suitability of their approach. If in doubt, always ask your GP for their advice or a referral. Stay safe.

02.01.2022 Diverticulitis is painful and acute episodes require hospitalisation. Hospital food can be bland at the best of times, but restrictive therapeutic diets even more so.
