14.01.2022 Mango Ice cream Make lush Mango Ice cream without all the sugar. This is a dish the kids can make and pop into popsicle forms or into ice trays and give as tre...ats. Ingredients 2 cans coconut milk, full fat 1 tsp vanilla essence 2 tbs honey 1 cup mango, about 3 mangoes 2 egg yolks, optional this thickens it Instructions Put mango into food processor and pulse. Then add remaining ingredients and pulse. If using an icec ream maker put into it and turn for about 30 minutes. If making by hand Place in a metal or plastic dish and put into freezer. Around the 30 minutes, as it starts to freeze at the edges take it out and stir with a spatula or hand mixer. Return to freezer. Repeat process every 30 minutes for about 4 times.

It’s been a few months now and I still haven’t filled the bag to drop off in the redcycle bin! Any off cuts, leaves etc go in my compost. Very very little goes to landfill!
07.01.2022 Did you know that avocadoes don’t ripen until they’re picked? It’s actually the harvesting (picking) action that triggers the ripening process. The Hass avocadoes have a rough skin but a creamy texture. As the Hass ripens, its skin goes from green to a dark purple. Before cutting, make sure they have plenty of ‘give’ when pressed: an unripe avocado is pretty tasteless. Why you ripen a Box Divvy Avocado. Box Divvy Avocadoes will usually come to you hard as they have just been ...picked and not ‘gassed’ in order to ripen them. Most supermarket avocadoes are gassed with ethylene to get them ‘just right’ when they go onto the shelf. However, this will shorten its life: they tend to go brown within a few days of purchasing. Box Divvy avocadoes are left to ripen naturally. Whilst you might have to wait a little, they’ll then last a week. How to speed up the ripening process Pop some unripe avocadoes into a paper bag with an apple or ripe banana (heavy breathers): these fruits give off natural ethylene. This can speed things up by a few days. Once ripened, the fruit can be refrigerated for two or three days (I’ll be honest mine seems to last longer than that in the fridge once ripe) Why are Box Divvy avocadoes smaller? How many of you have cut a large avocado, put half in the fridge only to find when you are ready to eat the other half it’s gone brown? With Box Divvy avocadoes you can eat the lot! If, however, you only using one half, leave the stone in the unused half, this helps prevent it going brown. What to do with avocado? Use avocado as a cholesterol-free alternative to butter or margarine, or make a tasty Guacamole dip by mixing avocado with Spanish onion, tomato, garlic, chopped chilli, lime juice and salt & pepper. Smashed on toasted sourdough topped with halved cherry tomatoes, crumbled feta, drizzled with extra virgin olive oil & balsamic vinegar. Sprinkled with pine nuts. Yum!

05.01.2022 Asparagus is here so it must be spring! Asparagus announces the start of spring, and they’re a tad early although, spring officially starts September 1. The ...initial asparagus supply comes from Victoria, and it’s not until late September that the locals start picking. Did you know that at the height of the growing season, it can take just 24 hours for an asparagus spear to appear seemingly out of nowhere? What you don’t see is the activity underground, with asparagus plants sending runners throughout the soil which almost at random will send asparagus spears to the surface. How cool is that The early supply is a bit unruly: they’re not always straight, the heads can be a little loose, but they’re crisp and tender. 03.01.2022 One of our local farmers Charlie and his grand-daughter Charlie (pictured) have more zucchini flowers than they know what to sensibly do with. Zucchini flowers ...are normally snapped up by high end restaurants but due to Covid, sales have slowed. Some of our hub members purchased them a few week's ago & really enjoyed them. One of our hub member's is a chef & stuffed the zucchini flowers with cream cheese, prawns & crab. Then fried them in a tempura batter! Charlie really wants you to try them out and is offering them at $3.40 a punnet. 03.01.2022 I N V E G E T A B L E S : Heavy rain over the past week is now starting to impact the more sensitive greens like dill, coriander, English spinach, choi sum and others so expect to pay a little more over the next few weeks whilst stocks recover. A few other vegetable lines will have elevated prices for a few weeks as they are in between growing regions, in particular capsicums, avocadoes and broccoli. ... On the other hand, many vegetables tomatoes, cucumbers, zucchini, carrots, eggplant, lettuces, cauliflower remain cheap and plentiful!
02.01.2022 Store-it Sunday. Each week we will look at ways of storing various Box Divvy produce to keep it fresh for longer. This week we are featuring: ... Potatoes Potatoes last longer on the kitchen counter than most fruits and vegetables, but eventually, they start to sprout green shoots and lose some of their freshness and flavor. If you know how to store them properly, they'll stay fresh weeks, or possibly even months, longer. All you need to store them so they'll stay fresh longer is a cardboard box, a paper or mesh bag, or a basket. Your potatoes will last four to six months when properly stored. How to Store Your Potatoes This is an easy process, but it should be followed precisely for the best results. - Inspect all the potatoes for soft spots, sprouts, mold, shovel damage, and pest damage. - Place the potatoes in a cardboard box, paper bag, mesh bag, or basket to ensure good ventilation. Plastic bags won't allow them to breathe and will shorten their shelf life considerably. - Store your potatoes in a cool, humid, and dark place. Never store potatoes in the fridge, the too-cold temperature turns the potato starch into sugar. - Check on your potatoes regularly and remove any that are soft, shriveled, or sprouted so they don't cause more potatoes to go bad (Even if your potatoes have sprouted they are still safe to eat as long as they are firm to the touch and are not shriveled). Additional Storage Tips There's lots more to know about storing potatoes. Keep all these tips in mind: - Don’t wash potatoes until you are ready to use them. - Keep your potatoes away from other produce to prevent flavor transfer and premature ripening. It's especially important to keep your potatoes away from onions. They both release gases that ripen the other one. This makes that combined potato and onion storage box is an all-around bad idea.
