Preheat oven 200C. 2. Place steaks side by side in a small ovenproof casserole. Sprinkle with ginger, onion and lemon juice. Pour the soy & wine over them. Cover and bake for 15 minutes or until the fish flakes. To serve, spoon a little of the cooking liquid over each serving. Capers to garnish.

15.01.2022 Delicious Packham Pears are in season, so let's get creative in the kitchen Pear and apple crumble (Serves 4): 1kg apples and pears... 1 orange, grated zest and juice freshly grated nutmeg 1/2 cinnamon stick or 1 tsp ground cinnamon 25gm-30gm sugar cream or Greek yoghurt, to serve Preheat the oven to 160C. Peel, core and slice the fruit and put it in a shallow ovenproof dish. Grate over the orange zest and pour on the juice. Sprinkle on the cinnamon and sugar. To make the crumble: 63gm plain white flour 75gm toasted hazelnuts, roughly chopped 15gm rolled oats 1/4 tsp ground cinnamon 38gm soft brown sugar (light or dark) 25gm demerara sugar (light brown sugar) 63gm cold unsalted butter, cut into chunks Put the flour, hazelnuts, oats, cinnamon, sugars and butter into a food processor and pulse until the mixture resembles large breadcrumbs (this can be kept in the fridge until you want it or put straight on the prepared fruit). Bake for 30 minutes or until the topping is pale gold. Serve warm with cream or Greek yoghurt.

The government is now encouraging young people to take a Gap year and making offers for increased Youth Allowance to get out there and help the farmers. Many farmers who can’t pick their fruit will be burying it. What a waste. ... So if you know a young person let them know it’s an adventure whilst helping the economy get back on its feet.

Dip in Pumpkin Cob INGREDIENTS:... * Shepherd's Pumpkin Cob Loaf * 500g diced pumpkin (1cm cubes) * 1 clove garlic, crushed * 2 teaspoons ground cumin * 2 tablespoons Greek or Natural (unsweetened yogurt) * 2 tablespoons raw cashews * Fresh coriander (2 tablespoons finely chopped + extra to serve) * Salt and Pepper, Olive Oil METHOD: * Microwave pumpkin with a teaspoon of water for a few minutes, until par-cooked. In a large frypan over medium heat, fry garlic and cumin in olive oil for 1 minute, then add pumpkin. Fry until soft, then remove. * Add pumpkin, cashews and the yogurt into a blender and whiz until it forms a thick dip consistency - not too pureed, a few chunks are nice! Add chopped coriander, salt and pepper to taste, and stir through with a spoon. * Hollow out the Pumpkin Cob carefully (retaining the bread from inside for dipping) and bake lightly until crispy. Remove the cob from the oven, leave to cool until it's just warm and then gently pour and spoon in the dip. * Decorate with a big sprig of coriander and serve on a platter with the lightly toasted bread chunks, plus vegetable sticks for dipping
