24.01.2022 So many of us love bananas and it's not surprising that they're up there as the most popular fruit on our Hub Wishlist. And there's good reason why we love the Box Divvy bananas so much, they taste better, they're better for our environment plus they are cheaper!. 95% of Box Divvy bananas are sourced mainly from the Coffs region. Transport from Coffs (530kms from Sydney) uses about 80% fewer food miles compared with Queensland bananas, most of which are grown in Innesfail, s...outh of Cairns. Because of the more humid climate in North Qld, the crop requires a fair amount of ag chemicals fungicides and pesticides mainly to maintain their good looks. That is important, as the major supermarkets only buy Qld bananas and cosmetics are considered more important than flavour and nutrition. By contrast, Coffs bananas use little or no chemicals at all. What’s more: because it’s a little cooler than Qld, it takes an extra 1-2 months to bring the fruit to maturity. That makes the Coffs bananas noticeably sweeter. That said, they may not always win a beauty contest! In today's version I used eggplant, zucchini, red capsicum, broccoli, asparagus, brussels sprouts, green beans and red onion. 08.01.2022 Potatoes often get a bad rap but theyre rich in potassium and are a good source of fiber. The potato skins are a great source of antioxidants that may provide heart health and anti-cancer benefits. Potatoes also provide resistant starch, a type of carbohydrate that cannot be digested so it helps regulate blood sugar levels while helping to keep you full. And finally, who can resist a golden potato rosti. Take a couple of potatoes and grate coarsely. Season with some salt and... pepper. Melt a little butter in a fry pan over low-medium heat and cook for about 15 mins. Turn the rosti out onto a large plate and return the pan to the heat adding a little more butter. 05.01.2022 Like most households onions are a staple in my cooking. This week I went a bit overboard with the amount I ordered for myself so I made up a batch of caramelised onions. To make, I peeled and sliced the brown onions and cooked them slowly with some olive oil and a pinch of salt. Towards of the end of the cooking I added a little brown sugar and balsamic vinegar to help the process along. Super delicious and so versatile! Tonight I plan to use some as a pizza topping! 03.01.2022 Using up some leftover broccoli to make these incredibly delicious Baked Broccoli Cheese Balls. Heres how I made mine 3 cups roughly chopped steamed broccoli 1 cup panko breadcrumbs 2 eggs... cup grated tasty cheese 2 shallots, finely sliced 2 cloves garlic, minced Salt & Pepper Olive oil spray 1. Place all ingredients (except olive oil spray) in a bowl. Mix well to combine, roughly mashing up the broccoli. 2. Scoop up a heaped tablespoon, then press in firmly to form into a ball. Place on tray lined with baking paper and repeat with remaining mixture - makes about 15 balls. 3. Spray with oil then bake for 25 minutes in a 200C oven, or until the surface is slightly crisp and golden. #boxdivvyeastryde #broccoli #eatyourgreens #fingerfoods #lunchboxideas
