22.01.2022 This aint no ordinary butter! 2 hrs at 20C (70F) using the Cold Smoke Adaptor Kit on our Realtree Camo Bradley Smoker using Sage and Maple Wood Bisquettes should just about do it. SMOKED BUTTER PROCESS... 1. Set up your smoker with the Sage and Maple Wood Bisquettes in cold smoking mode. Try to keep it around the 20C (70F) Mark. 2. Cut Blocks of butter in half so each smaller block is about 2.5 cm thick. Transfer the butter to your Bradley Jerky rack or use a wire rack with a Magic Mat. Put your butter into the Bradley Smoker and Cold Smoke for about 2 hours. 3. Remove from the Smoker and allow the butter to rest uncovered for a few hours to assist in softening the smokey flavour. Place in fridge to harden up then Vac Seal for refrigerated storage. 19.01.2022 The Bradley Smoke Generator with adaptor kit is a highly adaptable unit that allows you to retrofit almost any small structure into a smoke house. Fridge , Old Freezer, Build your own wooden box, super easy to convert into a cold smoker... The unit consists of two parts. The Smoke Generator is identical to that which is supplied with the Bradley Original Smoker. However, where the lugs would attach to the cabinet, they instead attach to the face plate of the adaptor, which is made of stainless steel. Like all Bradley Smoker products, the unit uses Bradley flavour Bisquettes. I have 3 left over that are brand new and heavily discounted.

19.01.2022 PotjieKing (POY-KEE-KING) is a closed unit, raised off the ground, the fire and ash are contained and minimal heat is transferred to the ground making it safe to use virtually anywhere! To make life even easier PotjieKing comes with a lid clip on the side, keeping the cooking lid off the ground. Also included is your hand tool for opening and closing the doors, lifting your Potjie Pot lid and raking the coals. PotjieKing is incredibly fuel efficient with 1 layer of briquet...tes lasting 3 4 hours! The double door design gives you control over your cooking temperature. PotjieKing is most fuel efficient when cooking with both doors closed. Enough air enters the unit through the slots to keep it burning, but should you require more heat just open up the bottom door (leaving the top closed) which creates air flow to your fire thereby heating it up. Alternatively should you wish to allow some of the heat to escape you can open the top door, which acts the same as if you had opened your oven door allowing the heat to escape. The design of the PotjieKing ensures that you have no wind interference; this means that you will have a constant cooking temperature. 10.01.2022 The difference between cooking with wood, and food smoking. A little bit about cooking with wood and smoking:... Food smoking is completely different from cooking using wood as a fuel. When you cook using wood, it is usually well beyond 250 degrees. As wood burns and becomes self combusting it is no longer producing a smoke flavour. The gases the wood produce is full of chemicals that will make the food taste acidic, and dry. I am sure you have heard about the smoke ring in terms of BBQ. When wood is used to cook meat at temperatures above 250. The wood discharges a chemical called nitrogen dioxide When come s into contact with myoglobin a protein in the meat, it changes the meat to a red color. The chemical left in the meat is nitric oxide. I won’t get into it, but it is not good stuff. Smoking food is done below 240 degrees: Also, it is important to not allow the wood to continue to burn down to ashes to control the temperature and also to prevent the wood from discharging those nasty chemical. All our products do this continuously. When our bisquettes are finished smoking, 20 minutes, the one behind pushes the spent one into the water pot where it is extinguished. You get all the good smoke flavor, and no chemicals or harsh taste into your food. That’s the secret to Bradley Smoker. Hope this helps explain the how’s & why’s of Bradley Smoker.
