05.01.2022 Bravo Apple, Spinach and Feta Salad // The lovely Lisa Holmen from @lisaeatworld created this gorgeous salad recipe for us last year and it seems perfect for the season. Serves 2 Ingredients. 120g baby spinach and rocket... 1 Bravo apple, unpeeled, finely sliced 2 tbsp dried cranberries 3 tbsp chopped almonds 2 tbsp pumpkin seeds 100g feta cheese, crumbled Honey & Dijon Dressing. 1 tbsp honey 1 tbsp Dijon mustard 1/2 tbsp white wine vinegar 2 tbsp extra virgin olive oil Method. To make the honey and dijon dressing, combine all the ingredients in a small bowl and whisk together until well blended. Taste and adjust seasoning if necessary. Place baby spinach and rocket in a large salad bowl. Top with dried cranberries, almonds, pumpkin seeds and feta. Drizzle the honey and dijon dressing over the salad and toss gently. Arrange apple slices in a fan pattern on top of the salad. Serve immediately.

Thanks so much for the tag! #Repost @cmdcreations nothing better than a freshly baked loaf ... you guys this loaf is unreal. such a fluffy, dreamy texture, packed with apples, dates & crunchy hazelnuts This loaf may just be as good as the classic banana bread loaf dEATS below save it and give it a go xx 3 eggs 1/3cup oil 1/2cup kefir or milk 1cup wholemeal spelt flour 1/2cup hazelnut meal 1/2cup oat flour 1/4cup coconut sugar 1tsp mixed spice 2tsp baking powder 1/2cup chopped dates 1/3cup chopped hazelnuts 3 red apples (I used bravo) 1tsp honey Combine the wet ingredients- eggs, oil and kefir and mix until combined. Combine the dry ingredients- spelt, hazelnut meal, oat flour, coconut sugar, mixed spice and baking powder. Add the wet mixture to the dry and mix to combine. Dice 2 of the apples and fold them into the mixture with the dates and hazelnuts. Pour the mixture into a lined loaf tin. Slice the last Apple and neatly place on top of the loaf. Drizzle the loaf with honey. Bake at 165 for 50mins or until golden and cooked through. Enjoy!! Happy Friday ( # @cmdcreations )
