24.01.2022 Asparagus and Salmon stir-fry with ginger Ingredients: - 2x Tsp Sesame Oil - 4x Salmon Fillets (skin off) ... - 1x Red Onion (sliced into 1/4) - 2x Bunches Asparagus (woody ends removed) cut into 5cm pieces - 5cm Piece of ginger, peeled and cut into match sticks size pieces - 1/4 GF Oyster Sauce - 2x Tabs GF Black Bean Sauce - 2x Tabs Chinese Cooking Wine - 1-2 Bunches Baby Bok Choy cut into halves, lengthways - 200g Edamame Method: 1. Heat oil in wok 2. Add 1/2 the Salmon & stir-fry for 2-3 mins or until lightly golden (repeat with remaining salmon) 3. Add remaining oil to wok, add onion, asparagus and ginger and stir-fry for 2mins or until golden. 4. Return Salmon to wok with the oyster, black bean sauce and Chinese cooking wine. 5. Bring to the boil 6. Add bok Choy and edamame and stir-fry for 2-3mins or until bok Choy is welted 7. 13.01.2022 Slow Cooked Rosemary & Garlic Lamb Shanks in Red Wine Sauce: INGREDIENTS: 4 lamb shanks 1 tsp each salt and pepper 2 - 3 tbsp olive oil... 1 cup onion , finely diced 3 garlic cloves 1 cup carrot sliced 1 cup celery sliced 2 1/2 cups / 625 ml red wine , full bodied 28 oz / 800g can crushed tomatoes 2 tbsp tomato paste 2 cups / 500 ml chicken stock 5 sprigs of thyme 5 sprigs of rosemary 2 dried bay leaves (or 4 fresh) METHOD: * Set up slow cooker as desired * Pat the lamb shanks dry and sprinkle with salt and pepper. * Heat 2 tbsp of olive oil in a heavy based pot over high heat. Sear the lamb shanks in 2 batches until brown all over, about 5 minutes. * Remove lamb onto a plate and drain excess fat (if any) from the pot. * Turn the heat down to medium low. Heat remaining 1 tbsp of olive oil in the same pot, if needed. Add the onion and garlic, cook for 2 minutes. * Add carrot and celery. Cook for 5 minutes until onion is translucent and sweet. * Add the red wine, chicken stock, crushed tomato, tomato paste, thyme, rosemary and bay leaves. Stir to combine. * Place the lamb shanks into the slow cooker, squeezing them in to fit, poor liquid over so they are mostly submerged, * Cover, and set your slow cooker to suit your requirements. Cook for 4-5 hours or like me over night . * Remove lamb onto plate and keep warm. Pick out and discard bay leaves and thyme. * Strain the sauce into a bowl, pressing to extract all sauce out of the veggies. Pour strained sauce into a pot. Bring to simmer over medium heat and reduce slightly to a syrupy consistency. Taste then add salt and pepper to taste. * Serve the lamb shanks on mashed potato or cauliflower puree with plenty of sauce! Meanwhile, heat one-quarter of the butter in a large frying pan over medium heat; cook pumpkin, stirring, for 5 minutes or until almost tender. 3. Add asparagus; cook, stirring, for 5 minutes or until vegetables are tender. 4. Add chicken; cook, stirring, until hot. Season to taste. Remove chicken mixture from pan; cover to keep warm 5. Heat remaining butter in same pan over medium heat until browned lightly. Add sage; remove from heat 6. Place one pasta sheet on each of four serving plates. INGREDIENTS 8 chicken thigh cutlets, skin on 170g rindless bacon rashers, coarsely chopped... 1 leek, thinly sliced 2 green apples, peeled, cored, cut into wedges 125ml (1/2 cup) apple cider or apple juice 125ml (1/2 cup) Massel Chicken Style Liquid Stock 6 large fresh thyme sprigs 200ml ctn crème fraîche 2 teaspoons Dijon mustard Fresh continental parsley leaves, to serve (optional) METHOD Step 1 Preheat the oven to 200C/180C fan forced. Season the chicken. Place a large non-stick ovenproof frying pan over high heat. Cook half the chicken, skin-side down, for 4 minutes or until the chicken skin is golden. Turn and cook for 3 minutes. Transfer to a plate. Repeat with the remaining chicken. Step 2 Drain and discard the fat from the pan. Return the pan to the heat. Add the bacon and leek. Cook, stirring occasionally, for 4 minutes or until the bacon is crisp. Add the apple and stir to coat. Add the cider or juice and simmer for 3 minutes or until reduced. Add the stock and thyme. Bring to a simmer. Step 3 Return the chicken, skin-side up, to the pan. Place in the oven and cook for 40 minutes or until the chicken is tender. Step 4 Transfer the chicken to a plate. Add the crème fraîche and mustard to the pan and whisk to combine. Place the pan over medium heat then return the chicken to the pan. Simmer for 5-10 minutes or until the sauce has thickened slightly. 05.01.2022 Maylasian Fish Curry INGREDIENTS * 4 small eschalots, halved * 3 garlic cloves * 200g Green Beans, halved ... * 3cm piece galangal or ginger, peeled, finely grated * 2 teaspoons shrimp paste or 4-5 large anchovy fillets * 1/4 cup (60ml) canola oil or sunflower oil * 4 small red chillies, seeds removed, roughly chopped * 20 fresh curry leaves, plus extra to serve * 1 1/2 teaspoons sweet paprika * 1/2 teaspoon ground turmeric * 270ml can coconut milk * 1 1/2 tablespoons tamarind concentrate * 2 lemongrass stems, outer leaves discarded, bruised with back of a knife, cut into 4cm lengths * 800g skinless and boneless bream fillets (or flathead, ling or snapper fillets), cut into 4cm pieces * Steamed Coconut Rice METHOD 1. Process eschalots, garlic, galangal, shrimp paste and 2 tablespoons water in a food processor, or pound in a mortar using a pestle, to form a paste. 2. Heat oil in a wok or large, deep frypan. 3. Add paste, chilli, curry leaves, paprika and turmeric and stir over medium-high heat for 2-3 minutes until moisture evaporates. 4. Add 1/2 cup (125ml) water, coconut milk, tamarind and lemongrass and bring to the boil. 5. Reduce heat to medium-low and simmer for 10 minutes or until mixture reduces slightly. 6. Add fish and sugar and simmer for 5 minutes or until the fish is just cooked. Adjust seasoning with salt and sugar to taste. 7.
