Sasha @bread_bread_more_bread arrived at work yesterday @sproutbakerycastlemaine and told me he had something to give me with my name on it that they found while doing a clean out @loaferbread apparently they had already had a look in the Singapore airline travel bag, as you do when you find a stash and what a wonderful heartfelt package it turned out to be from Antione @stowaway_olive a gift of true friendship that began 22... years ago @naturaltuckerbakeryofficial the banneton itself is a special piece of australian sourdough baking history being one of the original 60 purchased for Natural Tucker that you may even remember yourself John @highpriestofsourdough and Iain @veganbaker you would definitely remember them. The Bread Builders book too holds a special place in my life, l was staying with Alan Scott in California after my second time round @berkshiremountainbakery catching up with Chad @tartinebaker and Liz @lizprueitt_tartine ( correct me if I’m being out of line here Liz but I remember telling you that you should meet Alan while we were all still working with Richard @berkshiremountainbakery ) l was also helping finish the building of the Weber’s first oven @dellafattoria Alan was telling me that he was planning on formatting a book and that would become BreadBuilders Better late than never Ants but thank you so much #wereallinthistogether #friendsforlife #breadheads #banneton #breadbible #naturaleaven #sourdoughbaker See more

09.01.2022 It’s almost with trepidation that I’m doing this post. I’ve been spending so much of my screen time just trying to keep up with how the world is unfolding and trying to feel the pain and empathy of so many lives that have been affected by our current situation and growing awareness of who we are as a global community. I haven’t been posting but I’ve really been trying to engage in an understanding and dialogue with people. Social change is an incredible evolution that takes a...n enormous effort to facilitate and l admire all those people that have made the effort to stand up to inequality, injustice in every aspect of our lives and those of others. 05.01.2022 Yes there’s wheat growing in my bro’s paddocks at Cooinda and it’s a very different view than the usual monoculture cropping technique that we have used for so many years previous. This is wheat coexisting with a ground cover of everything else that’s in the paddock, not direct drill with a massive spray regime. Deep tillage prior to sowing allowing real aeration and root structure growth, it’s taken at least 20years to get to this point in the paddocks and it’s beautiful to see.
