The white truffles of the Alba region are highly sought after and are unearthed between September 21 and January 31. This year's harvest was excellent, both in terms of quantity and quality, after a difficult season last year. The bumper harvest has brought the regular market price down -- to the applause of restaurateurs and gourmets. "Last year, because of the drought that drove a weak harvest, we got to 600 to 700 euros for 100 grammes. This year we went to 250 euros and now it is around 350 euros," for nuggets weighing an average of 20 grammes, said Antonio Degiacomi, head of Italy's National Centre for Truffle Studies. Degiacomi said rains and storms in July and August this year had provided ample water, which is perfect for the truffles. "It is characterised by an intense perfume, which conjures romantic encounters, the forests, nature. It is very evocative," said Degiacomi. Alba has hosted truffle auctions for 88 years as part of its annual truffle fair, which goes on for around two months. This year's event was held in conjunction with Hong Kong, where the buyer was located. 11.01.2022 TRUFFLES My thoughts / ramblings (by Jeff Green) I often hear where and how do truffles grow First you require lots of knowledge by listening and reading and researching, and when you have done all that you realize that you have not even scratched the surface.... Lots of faith helps Lots of hard work helps Where? In the ground not on it. Very cold climate where the dirt literally freezes, which means no truffle hunt until late morning. As time goes by I will add to this post They are generally my thoughts and experiences We are regularly asked how do you cook truffles. Simple answer is mostly you do not cook them. Grate a small piece over your cooked food like you do with Parmesan cheese on pasta dishes. See Peter & Lola's omelet (scroll down). Another favorite question is why are they so expensive? Perhaps it is the 10 years of back breaking work to produce your first truffle. Or is it the countless dollars spent over those ten years. If you were to come to our Truffiere and buy 1 kilo of truffle, yes that is indeed a lot of money. But all you require for a meal is a piece the size of the end of your finger not many dollars are required, and compared with the ooh's and ahh's from the fragrance generated by the grated black truffle, the money amounts to very little. Another answer might be why is Saffron more expensive than truffle? however you can buy saffron from Woolworths. And the list could go on.

10.01.2022 BREDBO BLACK TRUFFLES Ideas on how to use this gift from God Storing truffles is easy but can be very expensive if not stored correctly. Keep them in an airtight container with either dry uncooked rice or a piece of dry paper towel. Check the container at least every second day for sweating/condensation.... Place in a cool safe environment not necessarily the fridge. TRUFFLED EGGS Place truffles into a mason jar, or other air tight container (size depends on quantity of eggs). Small hand full of rice to absorb moisture. ( Do not discard the rice use for risotto etc. see below) Too much moisture is a truffles enemy. Place in fridge in vegetable or butter compartment, if you are in a cold climate just leave in a safe place in the garage. Leave for three days. Cook eggs any way you want them, plus shave or grate truffle over cook egg for more of the magic. SAVORY DISHES where eggs or cream is utilised. Treat the eggs as above. Cream can be truffled, open 300ml packet of cream and place in a small truffle reseal the cream packet and leave for two or more days, do not throw away the truffle reuse it. TRUFFLED BUTTER Heat the butter in a frypan over a modest flame until melted, Toss in the truffle and stir well to combine and let the flavour permeate the butter. Serve over fish, meats or smoked duck would be amazing, or eggs, let your imagination lead you. Truffled butter can be frozen and used as required either rolled in foil or gladwrap or put into small containers which can be used as gifts to only your best friends. Note if keeping I recommend using butter that has softened naturally, not heated in a pan. Black truffles can be heated to bring out their flavour. Truffles love fat and salt, so this butter used on cooked potato mashed or whole would be heaven. MASHED POTATO Mash the potato the way you like them, mix in grated truffle then leave it to rest for around 15 mins, reheat in the microwave before serving. RICE Arborio Rice cooked the way you like it for risotto etc. First treat the rice the same way as eggs (see above) then reuse the truffle to grate over your dish) Yummo hang on I’m inviting myself to dinner. PASTA Making your own pasta with truffled eggs is the best way, but if you use the packet variety like I do, just add grated truffle to your favourite dish then perhaps place shaved truffle on top. Steven and Shauna mowed the grass down either side of the rows and in between the trees, Jason and I st...rung a second catenary wire on another five rows, this is what we hang the irrigation sprinkler heads to, this allows the heads to hang straight and water a more targeted area. Judy worked on securing the water supply pipes to the top Catenary wire which is an ongoing never ending maintenance issue. I often talk about brule formations in the husbandry of truffle trees, and I am often asked what this is, the dirt patches around the trees is the brule, which is an indication of the root system, and that the truffle mycorrhiza is present and active, the other grasses cannot compete and die. 05.01.2022 920g truffle worth the wait --------------------------------- After 10 years of hard work and patience, Jeff and Judy Green at ‘Bredbo Oaks’ have just unearthed... their first truffle - a 920g monster. It’s pretty close to the record, says Jeff. The huge black Périgord truffle isn’t far off the world’s biggest, a 1.5kg truffle found on a farm in the Yarra Valley in 2016. After ten years of hard work, Jeff and Judy have finally been rewarded with a prize valued at $2,500/kg. The Greens retired 15 years ago with no knowledge or desire to farm truffles. They were caravanning around Australia and had settled on the Gold Coast when their son rang. He asked if we’d thought about a tree change, says Jeff. He was considering buying a farm to grow truffles. I said to Judy, ‘what the hell is a truffle?’ After extensive research, Jeff and Judy decided to take the risk and moved to a farm 6km out of Bredbo. They bought oak tree seedlings from a lab in Tasmania, which had inoculated the roots with the spores of truffles imported from France. For ten years, they worked tirelessly to care for over 400 trees through hot summers and freezing winters, all the while waiting for the first truffle to arrive. Jeff describes the process as similar to waiting for a baby, but babies don’t take ten years. Judy says that truffles are much more work. When the sweet smell of truffle was in the air, they called upon their neighbours at Macenmist Truffles to help find the ‘black gold’. Barbara Hill and her specially trained truffle dog, Fahren weaved through the rows of oak trees before the dog caught a whiff of the treasure. 01.01.2022 Bredbo Black Truffles are produced from the perfectly suited soils of Bredbo in NSW. The black truffles grown in Bredbo soils exhibit the sweet, earthy fragrance and savoury characteristics of the finest truffles from the Perigord and Provence departments of Southern France. The truffle harvest commences with the arrival of the frosts and the freezing nights which brings on the wonderful aroma of the French truffle in mid June. During the harvest period truffles are harvested... daily. Bredbo Black Truffles are the same as the French black truffles, Bredbo truffles are produced six months later in our winter rather than the truffles of the Northern Hemisphere winter. The French black truffle is considered the finest of the edible fungi and has a place in gastronomy alongside saffron, caviar, foie gras and the finest of wines. The use of the Bredbo black truffle is limited only by the imagination of the chef. It is used as a flavouring (similar to a herb) in a multitude of dishes such as: veal, soup, fish, shellfish, game, rice and salads.
