I loved the concept so much but as I was so busy with booked weddings I never had any time to develop my love affair with the palette knife cake. Till now. One good thing that isolation has done for me is allow me to explore new ways to use my skills. 19.01.2022 Dear Fellow Cake Makers (and basically, anyone who works as a creative in the wedding industry), Please STOP undervaluing yourself. You are worth so much more than what you believe. On the regular I receive messages from fellow cake makers asking me for advice the most common one is on pricing. When cake makers ask me for help with pricing my first question will always be, how much do you think it is worth? NOT, how much do you think OTHERS think it is worth. ... I usually get a response like, but youre better than me or, but I dont just make weddings or, I dont think I can ask people to pay that much. All of which I call bullsh!t. If you dont see the value in what you are doing, no one else will either. You see, when you dont charge enough you are setting a standard for your customers and they will come to expect the same from you in the future. They will question you when next time you charge more. And worse, they will tell their friends that you are so good but so cheap and their friends will expect the same. But you also set the standard for the industry. You may not think that you are influential, but you are. When you tell a customer that you are worth little, they then think we are ALL worth little. And, we are not. You, and I are creatives. We have a skill that our customers dont, which is why they are looking to hire a professional and they VALUE the skill, so dont devalue it by underselling yourself. You may think that we are competitors but we are not. We are colleagues and underselling your industry peers works only to keep a lid on the worth of us all. Maybe you dont see it as underselling. Maybe, you dont think you can charge more or people wont pay it. If you had a job at a store and your boss wanted to pay you for 4 hours work instead of 9, would you do it? Would you feel your efforts for 9 hours work was worth less than half? It is not about ripping people off or charging more just because it is a wedding; it is about a fair days pay for a fair days work. So, if you have not yet, look in the mirror and ask your boss for a pay risethe person looking back at you just might say yes.

16.01.2022 This cake is not all my minds creation...the design is inspired by another brilliant cake maker from Boston @soulcakeshop (ironically, there is no Facebook page for this biz, URL below). Though not the same, the concept comes from this artists work and, in my mind, that deserves to be noted. Its her art and I feel that when I am inspired, it is respectful to the original creator that I acknowledge it. Unfortunately, not everyone sees it this way. Some dont like to cred...it the inspiration. Im not sure why...in my mind, it does not devalue your own work by recognising the original creator. Its not even about design ownership...its about respect. In fact, it elevates you as a professional...it shows you as someone who believes in supporting those in your industry, whose work you admire and respect. It shows that you value the artistic flair, intellectual creations and individuality of those whom you work alongside. Some people like to credit brands they work with or maybe the company that made the topper or the professional photographer who kindly shared an image with you - (likely at no cost to you). And, as a creative, you have every right to expect your peers to want to do this. You have every right to be credited and you have every right to be noticed for what you achieve and inspire others to achieve. Lets not get ridiculous, NO, you dont need to credit the local grocer who sold you the eggs, milk and flour. But, as a professional, in an industry which relies on the good will, kindness and respect of each other...you should credit those who inspired you. This is after all, their intellectual property. It is true, some designs are a dime a dozen (there are a million semi naked cakes), but, when something is bespoke, incredibly well crafted and distinctive, give that person the respect they have earned. The years they have spent crafting, developing and honing their skills so that others may appreciate its beauty is something that is generous. Our industry is small. Those who are at the top of their craft worked hard to get there. It is not elitism; its hard work, dedication and constant learning. 15.01.2022 Recently the team at Statewide Food Distributors asked me to try out a new brand of fondant. Italian made Over The Top fondant is made for Australian conditions, and I have to sayI like it. This little video shows the very basics of fondant covering including how to achieve sharp edges. I found this product to be extremely lovely to knead, easy to roll and it has a very long working time, meaning you can work at your sharp edges without fear of the dreaded elephant skin. ... I didnt have a design in mind for this cake, rather, I just wanted to put it through its paces and see what I could do with it. If you are a novice cake maker who is scared of fondant, I would suggest you give this brand a try. Unlike some other easy to knead brands, it dries up nice and firm, ready for your other decorative work. Give it a go. You can find out more from the team at Statewide.

10.01.2022 Natives are again trending it seems for next seasons weddings. Ive had a stack of enquires of late requesting natives for their floral work on their cakes. There are a few tips when choosing natives for your wedding cake that you might like to take into consideration when booking your cake. Natives can be very heavy with thick stems. If the native needs to be inserted into the cake (of course, properly prepared) you need to consider the fact that some of these flowers have... stems as thick as a finger. Most of my flowers like this will have the stem removed and I wire them so that the heads are supported but not causing any structural damage to the cake. Most of my cakes with natives you will notice have a mix of natives alongside other flowers such as roses, orchids and foliage. When you order your cake with me, I contact your florist and ask for a list of everything they are using in the wedding, along with the hero flower. We want the cake to match the aesthetic of the wedding, yet still ensure the integrity of the cake is maintained. Natives are beautiful, and their shape and texture creates some beautiful contrast in floral work. However, for cakes, it is important that they are carefully prepared for food safety, and secured in order for them to look beautiful all night, and not damage your cake. 08.01.2022 Three reasons why getting three quotes wont make your wedding planning any easierSorry about that! 1. The items that you purchase and the services that you book for your wedding are for the most part, an emotional purchase. You choose your suppliers and/or your items based firstly on the fact that you fell in love with itand you simply MUST have it. So very often this is the case. I receive emails saying, Ive been following you on Instagram for monthsplease tell me you... are available for my wedding date!. So, to then do the obligatory three quotes to find that, yes, you will receive a lower quotation than mine doesnt really help when you want me to do the job. 2. There are a huge range of skills and abilities in the cake decorating scene. It is evident that some cake decorators have more refined skills than others, hence the higher price tag. So the three quote system needs to be done across like for like decorators with a similar skill set and range of ability in order for the comparison to be a fair comparison. 3. Proof of ability. This is a BIG one. This comes in many forms and includes referrals from your venue, other suppliers and past couples. People will only ever attest to a brand or product that they are confident you will be happy with. Sure, other suppliers may offer to the job for less, however, you should ask for evidence of work they have done which is of a similar level of skill. You do not want to be someones first attempt at a high-end design. No cost saving is worth seeing a poorly attempted cake in your photos. My advice is to consider your budget, your overall aesthetic and your gut. You must have confidence in whatever and whoever you trust for your big day. A few hundred dollars saved now will seem insignificant in comparison to your level of disappointment if you walk in to your reception only to be let down. 08.01.2022 Here are my top tips when choosing who you employ to make your wedding cake. Your cake (just like this one photographed by Sandie Bertrand Photography) will be photographed from all angles. All your guests take a picture of your cake so it needs to be right. 1. Your cake should be level and straight. Straight sides, level tops to tiers. If you want to check, slide an eye level picture to the sides of your phone screen...they should align. (Ill show you in a story).... 2. Choose a cake designer who is in line with your style. There is no point approaching someone if you dont like their style; chances are your cake will have your chosen cake designers flair so it makes sense you choose someone who already does the type of work youre looking for. 3. Ask for proof. Ask your cake designer to prove they can do what youre asking. You need some reassurance that you are in safe hands and that they are capable and confident. 4. Sample. 5. Expect to pay a little more for a premium cake maker. 6. Ask your photographer and venue manager for a recommendation. Your photographer sees all the details of your wedding and has seen everything. They know whats good. Your venue manager has tasted every wedding cake...trust me, they know.

03.01.2022 How big does my cake need to be? The size of your cake depends on many factors but primarily, your cake decorator will ask you if you intend to serve the cake as dessert or for coffee. What is the difference? Size. When you serve a cake for coffee, it is a smaller portion which comes out after all the formalities and after your main dessert. The venue usually serves this on a communal platter for your guests to help themselves. If you choose a coffee portion, you can often... get away with catering for around 75% of your number of guests. When you serve your cake for dessert, it is a larger portion - twice the size of a coffee portion. As it is replaces the main dessert, you need to ensure you cater for everyone, just as you would a main or entree. This means you need a larger cake. Always speak to your venue about how they cut the cake. Some venues will only serve a half size portion as their standard serve, meaning your guests will only receive a very small piece and you will be left with a lot of left over cake. Its also important to consider proportion when ordering your wedding cake. If you have 200 guests, a small two tier cake will look out of place in a huge venue. Similarly, a five tier cake will look over the top for a wedding of only 50 guests. Coffee portion = Height of tier x 1 wide x 1 deep Dessert portion = Height of tier x 2 wide x 1 deep Coffee serving portions for the cakes pictured, when cut correctly. 1. Serves up to 40 2.
